After creating Chocolate Chip Cookie Cups with Nutella in December, I’ve pretty much determined that everything good in life comes in the form of a cookie cup and I can guarantee you, this will not be the last cookie cup recipe you’ll find on WhitneyBond.com!

The best part about these totally adorable and scrumptious treats, is that they’re also easy to make! Simply mix up the cookie dough, press it in a mini muffin tin and bake, then use the end of a spatula to press the cookie into a cookie cup and fill with cream cheese frosting!

Instructions

  1. Start by preparing the red velvet cookie dough. Combine flour, cocoa powder, salt and baking soda in a small bowl.
  2. In a large bowl, cream together butter, granulated sugar and brown sugar, then add an egg, red food coloring, vanilla extract and vinegar. Combine the dry ingredients with the wet ingredients to make the dough.
  3. Fill greased mini muffin tins ¾ full with cookie dough. Place in a preheated oven set to 350°F and bake for 13 minutes. Remove from the oven and use the end of a spatula to indent each of the cookie cups.
  4. Let the red velvet cookies cool for 5 minutes, then move to a wire rack.
  5. Prepare the cream cheese frosting by adding cream cheese, butter, powdered sugar and vanilla to a large bowl and cream together with an electric hand mixer.
  6. Transfer the cream cheese frosting to a large ziploc bag.
  7. Cut a small hole in the corner of the bag and pipe the frosting into each of the red velvet cookie cups.

Red Velvet Cookie Cups

  • Preheat the oven to 350°F.
  • Combine the flour, cocoa, salt and baking soda in a small mixing bowl and set aside.
  • In a large bowl cream the butter, granulated sugar and brown sugar together.
  • Add the egg and mix well.
  • Add the food coloring, vanilla and vinegar and mix well.
  • Add the dry ingredients and combine.
  • Grease two 24 cup mini muffin tins with cooking spray.
  • Fill the cups ¾ full with cookie dough.
  • Place in the oven and bake for 13 minutes.
  • After removing the cookie cups from the oven, use the end of a mixing spoon or spatula to make an indentation in the middle of the cookie cups.
  • Let cool for 5 minutes, move to a cooling rack and let cool completely.

Cream Cheese Frosting

  • Add all of the cream cheese frosting ingredients to a large bowl and cream together with an electric hand mixer.
  • Transfer the cream cheese frosting to a large ziploc bag.
  • Cut a small hole in the corner of the bag and pipe the frosting into each of the red velvet cookie cups.
