I’m originally from Oklahoma, so there’s nothing I love more than a good meal of meat and potatoes! Especially when they’re kicked up a notch, like in the pairing of Cajun Potatoes and Blackened Beef Tenderloin.

While I originally prepared these potatoes to go with Blackened Red Snapper, I now make them all the time. The Cajun seasoning tossed on these potatoes takes you to out-of-this-world flavortown! The best part is, they’re so easy to make and pair well with tons of different recipes!

Simply toss red potatoes with olive oil and garlic, mix up the spice blend, sprinkle it on the potatoes and roast away. Seriously, it only takes 4 steps to make the best Cajun roasted potatoes ever!

Ingredients

Here I explain the best ingredients for this cajun potatoes recipe, what each one does, and substitution options. For the exact ingredient measurements, see the recipe card at the bottom of this post.

  • Potatoes –  Red potatoes are my favorite variety to use in this recipe. However, purple potatoes or Yukon gold potatoes also taste great.
  • Garlic – Fresh garlic cloves really add a punch of flavor that cannot be beat.
  • Olive oil – This is to coat to potatoes which will allow the seasonings to stick, and will add to the overall crisp of the potatoes. Any other mild cooking oil may be substituted if needed.
  • Cajun spice mix – a blend of herbs and spices with oregano, garlic powder, onion powder, paprika, cayenne pepper, thyme, salt, and pepper come together to create the most incredible creole-inspired flavors.

Instructions

  1. In a large bowl, toss quartered red potatoes with minced garlic and olive oil.
  2. In a small bowl, combine black pepper, kosher salt, oregano, garlic powder, onion powder, paprika, cayenne pepper and thyme leaves.
  3. Sprinkle the spice mixture over the potatoes and toss to coat.
  4. Spread the potatoes out in a single layer on a baking sheet and place into a 375°F oven for 30-35 minutes or until crispy and golden brown.
