Easy Breakfast Pizza

While I love any kind of pizza, any time of day, I’ve totally become a sucker for breakfast pizzas! I’ve seen them popping up on tons of brunch menus in San Diego and I can’t help but order one every time,
Earlier this week, I decided to take this breakfast pizza trend into my own kitchen and whip up a delicious recipe to share on the blog!
I topped the breakfast pizza with all of my favorite breakfast foods, runny eggs, potatoes cooked with onions and peppers, and Jennie-O Breakfast Turkey Sausage.
I love this all natural sausage because it contains less fat than traditional pork sausage and it’s gluten free! I’ve used it in several breakfast recipes over the years, like this Breakfast Taco Ring (yummy!) and Italian Turkey & Egg Breakfast Skillet (so easy & so good!)
This breakfast pizza is one flavorful way to start your day! It’s easy enough to make during the week for breakfast, or the perfect brunch option for weekends!
Ingredients
- 2 tbsp olive oil
- ½ lb potatoes (small dice)
- ½ cup onion (diced)
- ½ cup red bell pepper (diced)
- ½ tsp salt
- ½ tsp black pepper
- 1 tsp oregano
- 1 lb Jennie-O All Natural Turkey Sausage
- 14 oz pizza dough
- ¼ cup basil pesto
- 1 cup shredded mozzarella
- 4 large eggs
Preheat the oven to 425°F.
Add the olive oil to a large skillet over medium high heat. Add the potatoes, onion and bell pepper, sprinkle with the salt, pepper and oregano. Cook for 6-8 minutes. At the same time, in a separate skillet, add the turkey sausage and cook through, 6-8 minutes.
Roll out the pizza dough onto a baking stone. Spread with the basil pesto. Top with the cooked potatoes, onion, bell pepper and turkey sausage.
Sprinkle the mozzarella over the pizza.
Place in the oven to bake for 5 minutes.
Remove from the oven and crack the eggs on top of the pizza, place back in the oven and cook for an additional 10 minutes.*
*If you don’t like runny eggs, you can scramble the eggs and add them to the pizza with the potatoes and sausage before baking, or if you’re like my Mom and don’t like eggs at all, you can omit them from the recipe.
When the pizza comes out of the oven, feel free to top with your choice of crushed red pepper flakes, parmesan cheese or fresh basil.

Easy Breakfast Pizza
Ingredients
