Why you’ll love this recipe

To say I’m a huge fan of bruschetta would be a total understatement. Traditional bruschetta is an Italian appetizer that consists of grilled bread, rubbed with garlic and topped with olive oil and salt. Most commonly in America, it’s also topped with diced tomatoes.

This fresh Tomato Basil Bruschetta recipe has been a hit on the blog since 2012. It’s also inspired me to make a variety of different types of bruschetta, including this strawberry balsamic bruschetta recipe. Bursting with flavors, this is the perfect summer appetizer. Here’s why I love this recipe and know that you will too!

  1. It’s so easy to make. You only need 10 minutes and some basic dicing skills to toss it together! You can even make the strawberry mixture ahead of time. Place it in the refrigerator and simply toast the baguette and top it right before serving.
  2. It’s totally versatile. You can serve it at brunch, as an appetizer at a party, or even as part of a dessert course. The sweetness of the strawberries and balsamic glaze make it perfect for those of us that don’t like a super sweet dessert!
  3. The flavor combination is delicious. Creamy goat cheese, fresh strawberries, and balsamic vinegar are a winning combo! Serve it all on top of a crispy baguette and you’ve got yourself one delicious strawberry bruschetta recipe that has a great variety of flavors and textures.

Ingredients

Here I explain the best ingredients for this strawberry bruschetta recipe, what each one does, and substitution options. For the exact ingredient measurements, see the recipe card at the bottom of this post.

  • Strawberries
  • Balsamic vinegar
  • Fresh basil – you can also use fresh mint in place of the basil. Did you know that they’re actually from the same herb family? They’re both slightly sweet, but the mint will have a more cool refreshing flavor, while the basil will have a slightly peppery flavor.
  • Salt
  • Baguette  – you’ll only need half of a large baguette for this recipe. You can cut a whole baguette in half or purchase a demi baguette, which is half the length of a traditional baguette.
  • Olive oil
  • Goat cheese – I’ve also made this recipe with ricotta cheese and both are delicious. If you prefer a mild, slightly sweet cheese, I’d recommend going with a creamy whole milk ricotta cheese. If you prefer something that’s a little more tart and tangy, go with the goat cheese. If you want to get a little funky, you could also use blue cheese.
  • Balsamic glaze (optional) – I like to drizzle a balsamic glaze over the bruschetta to finish it off. This is totally optional. You can purchase a bottle of glaze at the grocery store. It will be on the same aisle as the balsamic vinegar. You can also make your own balsamic glaze at home. Simply reduce balsamic vinegar on the stove over medium low heat until it turns into a syrup consistency. Use immediately or store in a sealed container in the refrigerator until ready to use.

Instructions

I’ve included step by step photos below to make this recipe super easy to follow at home. For the full detailed recipe instructions, scroll to the recipe card at the bottom of this post.

  1. Toast the baguette slices. Slice the baguette into ½ inch thick slices and place them on a baking sheet. Brush olive oil on top of each slice of bread. Place in the oven and bake at 400°F for 5-7 minutes, or until the bread is golden brown and toasted. If you’re making this bruschetta at a backyard bbq, you can also toast the baguette slices on the grill over medium heat for 2-3 minutes per side.
  2. Prepare the strawberry topping. In a medium bowl combine diced strawberries, balsamic vinegar, salt and fresh basil.
  3. Prepare the goat cheese spread. In a small bowl, combine goat cheese with olive oil and salt.
  4. Assemble the bruschetta. Spread goat cheese on each of the toasted baguette slices, then top with the strawberry mixture. Optionally add a drizzle of balsamic glaze on top before serving the bruschetta to your guests.

You can also ditch the bread and cheese and serve the strawberry mixture over grilled chicken. Use the chicken marinade from my bruschetta chicken recipe, grill the chicken, then top it with this strawberry bruschetta. Serve over zucchini noodles or with a side of roasted or steamed vegetables.

  • 1 tablespoon balsamic glaze

Instructions

  • Preheat the oven to 400°F.
  • Slice the baguette into ½ inch thick slices. Place them on a baking sheet and brush with 1 tablespoon olive oil. Place in the oven and bake for 5-7 minutes, or until the bread is golden brown and toasted.
