One night for dinner, I decided to toss some extra potatoes we had lying around in the air fryer for a side dish. These turned out to be the most crispy and delicious potatoes that I’d ever “roasted”. I wrote down the recipe immediately and have proceeded to make these potatoes at least a dozen times over the last month.

While I do recommend soaking the potatoes before you “roast” them in the air fryer, this step is totally optional. I’ve made these potatoes soaking them first, and skipping the soaking step. They’re really crispy and delicious either way.

So why do you soak potatoes before air frying them? Just like I soak my air fryer french fries, this process helps remove excess starch from the potatoes and will make them extra crispy. Even if you only have an extra 10 minutes, I’d recommend tossing them in a quick water bath before air frying the potatoes.

For the seasoning, I use a combination of parmesan cheese, Italian seasoning, and minced garlic to give these potatoes a great salty, garlic and herb flavor that can’t be beat! Once you taste these crispy air fryer potatoes, you’ll see why they’re my favorite and why I serve them at every meal of the day!

Ingredients

  • Yukon gold potatoes – this potato has a wonderful buttery flavor and creamy texture. When roasted in the air fryer, the outside of these potatoes crisp up perfectly, while the inside is tender and creamy. You can use red potatoes or russet potatoes for this recipe but the texture will be different with each potato. Red potatoes are firmer and great in potato salads or soup. Russet potatoes are fluffy and great for baking or mashing. Since russet potatoes do have a higher starch content than Yukon golds, if using russet potatoes for this recipe, I highly recommend soaking them before air frying them for the best texture.
  • Olive oil – or another vegetable oil will work to coat the potatoes before seasoning them and cooking them in the air fryer.
  • Parmesan cheese – grated parmesan or “shaker parm” will work great for this recipe.
  • Italian seasoning – click the link for my easy, homemade seasoning mix. It’s filled with delicious herbs, like parsley, rosemary, and thyme. It also includes minced onions and garlic, which add great flavor and texture to this recipe. You can make it ahead of time and store it in the pantry for up to 6 months. You can also purchase pre-made Italian seasoning on the spice aisle at the grocery store.
  • Sea salt – to season the potatoes. I like to use flaky sea salt. Any salt will work, but if you have coarse-ground salt available, I like the texture it adds to the outside of the crispy potatoes.
  • Dried minced garlic – while my homemade Italian seasoning already contains dried minced garlic, I like to add extra to this recipe so that it has a great garlicky flavor. I recommend dried minced garlic, instead of fresh, because the fresh garlic is more likely to burn in the air fryer. You can also use garlic powder for the same flavor, but a different texture.

Instructions

I’ve included step by step photos below to make this recipe super easy to follow at home. For the full detailed recipe instructions and ingredient quantities, scroll to the recipe card at the bottom of this post. 

  1. Soak the potatoes (optional).  If you’re in a hurry, you can skip this step. But if you plan ahead a little bit, this step will help you achieve the crispiest potatoes. Simply submerge cubed potatoes in a large bowl filled with salted water (about 1-2 teaspoons of salt will work). Let them soak for 30-60 minutes. After the soaking time, remove the cubed potatoes from the water and pat them completely dry with paper towels before seasoning and cooking the potatoes.
  2. Oil and season the potatoes. Once the potatoes are dry, add them to another bowl and drizzle the olive oil evenly over the potatoes. Add parmesan cheese, Italian seasoning, salt, and dried minced garlic to the bowl. Toss the potatoes until they’re fully coated in the seasoning and cheese.
  3. Air fry the potatoes. Preheat an air fryer to 400°F. You want the air fryer to be hot when you add the potatoes, this will help them crisp up on the outside. Once the air fryer is preheated, add the potatoes to the air fryer basket in a single layer, so they’re not overlapping. You want the air to move around the potatoes so they’ll crisp up on all sides. I made this recipe in this 5.8 quart air fryer and all of the potatoes fit in one batch. Air fry the potatoes at 400°F for 10 minutes. Open the air fryer, shake the potatoes and cook for an additional 8-10 minutes, or until they’re crisped to your liking. Remove the potatoes from the air fryer and serve immediately.

Recipe tips

  • For extra crispy potatoes, always soak them before cooking them. This will help remove some of the excess starch from the potatoes and will help the potatoes crisp up in the air fryer.
  • You can cube the potatoes ahead of time and leave them soaking in water until you’re ready to season and cook them in the air fryer. Always be sure to drain the cut potatoes and pat them dry completely before seasoning them and adding them to an air fryer.
  • Leave the potato skins on the potatoes to save time, add fiber and nutrients, and help the potatoes achieve an even crispier texture.
  • Do not season the potatoes with the salt until you’re ready to cook them in the air fryer. Seasoning the potatoes with salt, then letting them sit for more than a couple of minutes, means the salt will pull water from the potatoes and they are more likely to come out of the air fryer soggy.
  • Always make sure there’s room around the potatoes in the air fryer. This allows the air in the air fryer to flow around each of the potatoes, so they’re crispy on all sides.
  • If cooking multiple batches of these potatoes in the air fryer, you can toss all of them back in the air fryer at the end (it’s okay if they’re overlapping for this) for 1-2 minutes to heat them up. This way they’ll all be hot and crispy when served.

How to make them in the oven

If you don’t have an air fryer, you can make this recipe in the oven. I recommend placing the seasoned cubed potatoes in an even layer on a wire rack, on top of a foil-lined baking sheet. Baking the potatoes on a wire rack will allow the hot air in the oven to move around each side of the potatoes, much like in the air fryer.

Bake at 400°F (on convection, if you have it) for 24-28 minutes. You don’t need to flip the potatoes if you cook them on a wire rack. If cooking them directly on a baking sheet, you will need to flip the potatoes halfway through the cooking time.

Storage and reheating

Leftover air fryer roasted potatoes can be stored in an airtight container in the refrigerator for up to 7 days.

Reheat them in the air fryer for 3-4 minutes at 400°F.

Variations

  • Make Cajun-style potatoes by omitting the parmesan cheese and seasoning the potatoes with a tablespoon of Cajun seasoning, instead of Italian seasoning.
  • Make buffalo-style potatoes by tossing the potatoes with this chicken wing seasoning, instead of Italian seasoning. You can still use the parmesan cheese, or leave it out of the recipe. Serve the potatoes with buffalo sauce and ranch dressing for dipping.
  • Make Greek-seasoned potatoes to pair with gyros by tossing the cubed potatoes with this Greek Seasoning, instead of Italian seasoning. Omit the parmesan cheese and instead top the potatoes with ¼ cup feta cheese crumbles after you cook them in the air fryer.
  • Make cheesy potatoes by omitting the parmesan cheese, and instead topping the potatoes with ¼ cup of shredded mozzarella cheese, Swiss cheese, or cheddar cheese during the last 1-2 minutes of cooking time in the air fryer.
