Inspired by the viral popularity of these Jalapeno Popper Crescent Rolls, I created these cheesy bacon crescent rolls. I love that you only need 6 ingredients to make this recipe. I used blue cheese, but you could easily swap in feta cheese, goat cheese or cheddar cheese.

This easy, cheesy recipe is always a crowd-pleaser! It’s the perfect appetizer for a holiday party, a great game day snack for a Super Bowl party, or a delicious brunch for Christmas morning. You can easily prep the filling ahead of time and toss these rolls together in just about 10 minutes.

Grab a couple cans of crescent roll dough and let’s get cooking!

Ingredients

  • Cream cheese – combined with the blue cheese crumbles, these two cheeses are smooth, creamy and flavorful!
  • Blue cheese – if you’re not a fan of blue cheese, you can use feta cheese crumbles, goat cheese crumbles or shredded cheddar cheese.
  • Bacon – you’ll need 3/4 cup of cooked, chopped bacon for this recipe. Follow this post for how to cook bacon in the oven, or purchase real bacon bits at the grocery store. If cooking bacon at home, you’ll need approximately 9 slices of uncooked bacon to get 3/4 cup of cooked, chopped bacon. Be sure to dice the bacon into small pieces so that it easily rolls up in the crescent rolls.
  • Green onions – add a pop of color, crunch and flavor to the rolls with a few diced green onions.
  • Crescent roll dough – using canned crescent roll dough keeps this recipe quick and simple! You can purchase canned crescent dough sheets, or crescent dinner rolls. If using crescent rolls, you’ll want to press the perforations together to seal up the dough for this recipe.
  • Butter – to brush on top of the rolls, for a flaky, buttery crust that browns up perfectly in the oven.

Instructions

I’ve included step by step photos below to make this recipe super easy to follow at home. For the full detailed recipe instructions and ingredient quantities, scroll to the recipe card at the bottom of this post.

  1. Prepare the filling. Add a softened block of cream cheese to a large mixing bowl. I recommend setting the cream cheese on the counter to soften for 15-20 minutes before starting this recipe. If you need to soften it quickly, place it in the microwave for 20 seconds. Add blue cheese crumbles, chopped, cooked bacon and diced green onions, and stir until it’s all combined.
  2. Top the crescent roll dough. Spread out the 2 cans of crescent roll dough on a large cutting board. If using rolls, instead of sheets of crescent roll dough, press the perforations together using your fingers, to form two solid sheets of dough. Gently spread the cream cheese mixture evenly over each of the sheets of crescent roll dough, making sure to cover them completely, leaving just about 1 inch around the edges.
  3. Roll up the crescent roll dough. Starting with the short side of the dough, roll up each sheet of crescent roll dough tightly over the bacon cheese mixture.
  4. Once both sheets of dough are rolled up tightly, you should have two long rolls on the cutting board. Slice each long roll of dough into 8 rolls using a serrated knife. Each roll should be approximately 1 inch thick, for a total of 16 rolls.
  1. Place the rolls, cut side up, in a greased baking dish. I recommend a 9 inch x 13 inch baking dish. You want the rolls slightly touching, but not smashed together.
  2. Cover the rolls in melted butter. In a small bowl, melt butter in the microwave. Brush the butter over the rolls in the baking dish. Place in a 375°F preheated oven and bake for 25-28 minutes, or until golden brown.

Recipe tips

  • You can make the cheesy bacon filling ahead of time. Store it in the fridge for up to 3 days before making the rolls.
  • If you want a crispy texture on the outside of all of the rolls, bake them separated on a baking sheet, instead of in a casserole dish. This way, every side of the roll will be exposed to the heat, crisping them up on all sides of each roll. Be sure to line the baking sheet with parchment paper, or spray it with cooking spray first. You will also need to reduce the cooking time, since the rolls will be exposed to heat on all sides, they will cook faster, than touching in a baking dish. I recommend 10-12 minutes.
  • You can prepare and bake the rolls ahead of time, then heat them up before serving at a party. I recommend using an air fryer or oven to reheat them for the best texture.
  • This recipe makes 16 rolls, but you can easily cut it in half and only make 8 rolls, if you’re making the recipe for a small family snack or dinner appetizer. Simply use one can of crescent roll dough, then cut the other ingredients in half to make the filling and butter topping.

Substitutions and additions

  • Spice it up! If you love spice, you can take a note from my jalapeno popper rolls and add a 4 ounce can of diced jalapenos (drained) to the bacon and cheese mixture. If making a spicy version of this recipe, I recommend using a spicy cheddar or pepper jack cheese, instead of the blue cheese.
  • Replace the diced green onions with chopped fresh dates. For a version of this recipe that’s both sweet and savory, replace the greens onions with 1/4 cup of finely chopped dates. This gives all of the vibes of these Bacon Wrapped Dates!
  • Serve with a dipping sauce. These rolls are delicious on their own, or dipped into blue cheese dressing, ranch dressing, or creamy chipotle sauce.

How to store and reheat

  • To store: any leftover rolls should be placed in an airtight container in the refrigerator for up to 5 days. Since these rolls contain dairy, you should not store them on the counter at room temperature.
  • To reheat in an air fryer: this is seriously my favorite way to reheat everything these days. Just pop these rolls from the fridge to the air fryer at 400°F for 5 minutes. They’re crispy on the outside, with a delicious warm cheesy filling inside!
  • To reheat in the oven: place the rolls in a single layer on a baking sheet and into a 400°F oven for 6-8 minutes.
  • To reheat in the microwave: place the rolls on a microwave safe plate in an even layer. Reheat for 30-60 seconds, until warmed through.

If you have leftovers, these rolls are delicious heated up and dipped into a warm bowl of tomato soup!
