Chipotle Chicken Tortilla Soup

Slow Cooker Chicken Tortilla Soup is given a smoky, spicy kick with the addition of chipotle peppers. It’s a simple crock pot recipe, that’s easy to prep in just 15 minutes. It’s also healthy & gluten free! One serving of the soup is only 165 calories and 13 net carbs!
Now that I’m back in school in the evenings, I’ve been trying to come up with recipes that I can easily take and microwave in our sweet little break room for dinner.
I’ve found that soups and chilis work really well. I can make a big batch in the slow cooker on Monday, then take it for dinner all week.
Yesterday I whipped up this scrumptious Chipotle Chicken Tortilla Soup. The chipotle pepper adds a little extra smokiness and spice to this already delicious soup.
I tossed all of my favorite toppings on this chicken tortilla soup! From tortilla strips and avocado, to cilantro and cheese, this soup is only complete when all of the delicious toppings are invited to the party!
A big bowl of this chicken tortilla soup is perfect for dinner, or serve it in a cup on the side of Chipotle Honey Pulled Pork Tacos, Pineapple Sriracha Tri Tip Tacos or Crispy Avocado Tacos.
After all, today is Taco Tuesday!
What You’ll Need
- 1 tbsp chipotle chili powder
- 1 tsp paprika
- 1 tsp ground cumin
- 1 tsp garlic powder
- ½ tsp black pepper
- ½ tsp kosher salt
- 1 lb chicken breasts (boneless, skinless)
- 6 cups low-sodium chicken broth
- 1 (14.5-ounce) can diced tomatoes
- 1 (6 oz) can tomato paste
- 1 chipotle in adobo sauce (chopped) + 1 tsp adobo sauce
- 1 cup onion (diced)
- 1 cup green bell pepper (diced)
- 2 limes (juiced)
- ¼ cup fresh cilantro leaves (chopped)
Optional Toppings
- 1 cup tortilla strips
- ¼ cup fresh cilantro leaves (chopped)
- 1 lime (sliced into wedges)
- 1 cup cheddar cheese (shredded)
- 1 avocado (diced)
Step by Step Instructions
In a small bowl, combine the chipotle powder, paprika, cumin, garlic powder, black pepper and salt.
Rub this mixture on the chicken breast, then place in a large slow cooker.
Pour the chicken broth and diced tomatoes over the chicken. Add the tomato paste, chipotle chili, diced onions and bell pepper.
Cook on low for 6-8 hours, or on high 3-4 hours.
Remove the chicken from the slow cooker and shred.
Place back in the slow cooker, then add the lime juice and cilantro.
Serve with tortilla strips, cheese, fresh cilantro, avocado and lime wedges.
Such a healthy, delicious, warm and comforting soup for fall!

Chipotle Chicken Tortilla Soup
Ingredients

- 1 cup onion, diced
- 1 cup green bell pepper, diced
- 2 limes, juiced
- ¼ cup fresh cilantro leaves, chopped

- 1 cup tortilla strips

Cooking this for the Super Bowl on Sunday. This is a very flavorful soup and made in the crockpot so it will be ready whenever your ready to eat.
I’m meal planning this for Tuesday and just want to make sure I have this right. It’s just 1 chipotle pepper chopped and 1 tsp sauce from the can? Any recommendations for what to do with the rest of the can? Thanks!
Hi Lindsay, yes, that is correct. You can use the rest to make a sauce, like I did for these boneless wings or add it to other soups, chilis or make Slow Cooker Chipotle Honey Shredded Chicken, great for sliders, tacos, on salads or in wraps!
