Cilantro Lime Cauliflower Rice

Cilantro Lime Cauliflower Rice is an easy, healthy side dish, perfect for serving with your favorite Mexican recipes. It also makes a great base for a gluten free taco bowl!

It only takes 10 minutes to make, start to finish, and is great as the base for a low carb bowl or served as a side dish.
How do you make it?
Add cauliflower florets to a food processor. Pulse the cauliflower until it forms a consistency similar to rice. This usually takes about 30 seconds.
Add olive oil to a large skillet on the stove over medium heat. Add the cauliflower rice and salt. Cover and cook the rice for 5-6 minutes.
Remove the lid and serve the rice.
Storing and freezing the rice
You can store raw cauliflower rice in the refrigerator for up to 5 days, or in the freezer for up to 12 months.
If you plan to make cauliflower rice part of your regular menu, I highly recommend making a big batch and storing portioned out servings in ziplock bags.
This makes it super easy to grab a bag anytime you’re meal prepping or need a quick and light side dish for dinner.
While you can purchase cauliflower rice pre-made in the freezer section of most major grocery stores, you will save a ton of money by making it at home yourself and it’s so easy to do it!

Cilantro Lime Cauliflower Rice
Ingredients
- 2 pounds cauliflower, cut into large pieces
- 1 tablespoon olive oil
- ½ teaspoon salt
- ¼ cup fresh cilantro, chopped
- ¼ cup fresh squeezed lime juice
Instructions
- Add the cauliflower to a food processor and pulse until it forms a consistency similar to rice.
- Add the olive oil to a large skillet on the stove over medium heat.
- Add the cauliflower rice and salt, cover and cook for 5-6 minutes. Remove the lid and stir in the cilantro and lime juice.
Notes
- When adding the cauliflower to the food processor, only add enough to fill it approximately half way. Pulse the cauliflower in the food processor, remove the cauliflower rice, then pulse the remainder of the cauliflower in batches until it has all been riced.
