A couple of weeks ago, I joined my friends at Vons to visit Santa Monica Seafood in Costa Mesa, California. We sampled local wild caught Troll King Salmon from Morro Bay, California.

While wild king salmon isn’t available year-round, when you can get it, you should! It has a delicious flavor and is given a “best choice” sustainability rating.  It’s also loaded with Omega 3’s, those wonderful healthy fats that your body needs. Good for you and good for the environment, this salmon is a win-win!

I brought some of this scrumptious King Salmon home with me, lightly seasoned it and tossed it on the grill. I love to grill salmon on foil for easy clean-up and no worries about the fish sticking to the grill. As soon as I removed the salmon from the grill, I spooned my favorite 5 minute Chimichurri Sauce right on top.

This grilled salmon recipe is quick and easy to prepare with minimal ingredients. I prepared it this way to let the flavor of the fish shine through! This is a great recipe for busy weeknights when you’re looking for a fast and fresh meal to make in under 30 minutes.

If healthy, quick and easy is what you’re looking for, then this salmon fits the bill! I originally shared this Lemon Herb Salmon recipe in 2012. Since then, it’s been in regular rotation at my house when I’m looking for something quick and healthy to make for dinner.

Salmon is loaded with omega 3’s, an essential fat that your body needs. It’s also a great source of protein and high in B vitamins! The lemon in this recipe gives it a boost of vitamin C, while the herbs add more vitamins and iron.

Roasted or steamed vegetables or a green salad on the side complete this healthy, gluten free meal. It only takes 10 minutes to prep the recipe and 15-20 minutes to bake, which means in less than 30 minutes, dinner is on the table!

OMG, I can’t get enough of this Tomato Basil Bruschetta! What started as a delicious Italian appetizer, served on a toasted baguette, has transformed into an entire category of recipes on the blog. This category includes some of the most popular recipes I’ve ever made!

Tomato Basil Bruschetta is fresh, light and flavorful. It’s a seriously delicious topping for so many dishes. I love to make a big bowl of it over the weekend and use it to top recipes throughout the week!

It’s hard to get Kurt excited about seafood recipes. After I made this baked salmon recipe, he said that he would gladly eat it every week. I’d definitely say that’s a win in my book! Since it only takes 29 minutes to make, this is the perfect healthy weeknight meal!

Both versions are totally delicious, so serve as you’d like! You could even ditch the rice and tortillas to make this recipe Whole 30 approved!
