Cheesy Tater Tot Breakfast Casserole

When it comes to breakfast, I’m a huge fan of cheesy eggs, flavorful sausage and crispy potatoes. Luckily this recipe combines all of those things into one incredible breakfast dish!
Because the breakfast casserole is easy to make ahead of time, it’s perfect for entertaining guests around the holidays or an easy weekend brunch. Simply assemble the casserole the night before, pop it in the fridge, then bake it up in the morning!

Prefer ham or bacon over sausage, no problem! Want to make a vegetarian tater tot casserole? Simply ditch the sausage for veggies or soy chorizo.

Instructions
- Cook the sausage.
- Add olive oil to a large skillet on the stove over medium high heat.
- Once the oil is hot, add diced onions to the skillet and saute for 5 minutes.
- Add breakfast sausage to the skillet, crumble and cook for 8-10 minutes.
- Note: Mild or hot breakfast sausage will both work with this recipe.
- Remove the skillet of onions and sausage from the heat and set aside.
- Prepare the casserole filling.
- In a large bowl, whisk eggs, milk, salt, pepper and hot sauce together.
- Stir in a can of diced green chilies and shredded Cabot Seriously Sharp Cheddar Cheese.
- Add the cooked sausage and onions, then stir everything together.
- Assemble the tater tot casserole.
- Spray an 8″ x 10″ baking dish with cooking spray.
- Pour the casserole filling into the baking dish.
- Arrange the tater tots in an even layer on top.
- Place in a 375°F oven, uncovered, for 50 minutes.
- Remove the casserole from the oven and sprinkle with additional Cabot shredded cheese.
- Place back in the oven for 10 minutes.
- Remove and serve immediately.
- Garnish with fresh chopped green onions, if you’d like.
Feel free to serve the casserole with salsa or sour cream on top, or on the side.
Prep ahead
The casserole can be made ahead of time and stored in the refrigerator, covered, for up to 12 hours. When ready to bake the casserole, place it in the oven and bake at the same time and temperature as instructed in the recipe.
Easy substitution ideas
- Vegetarian: to make this casserole meatless, substitute vegetables or soy chorizo for the sausage.
- To make the casserole with vegetables, sauté two cups of veggies along with the onion. I recommend diced bell peppers, sliced mushrooms and/or spinach.
- To make the casserole with soy chorizo, cook and crumble the soy chorizo just like you would the sausage.
- Bacon or Ham: Instead of sausage, you can substitute diced ham or cooked, chopped bacon. To do this, simply add the diced ham or chopped bacon to the egg mixture. After the onion has cooked down on the stove, set it aside add add it to the egg mixture with the bacon or ham.
How to reheat it
This tater tot casserole can be reheated in the oven or microwave.
To reheat the casserole in the oven, place slices of the casserole on a foil lined baking sheet and under the broiler in the oven on low. Broil on low for 4-6 minutes, or until the tater tots are crispy and the egg mixture is warm.
To reheat the casserole in the microwave, place slices of the casserole on a microwave-safe plate. Microwave for 2 minutes.
The casserole will stay good in the fridge for up to 5 days, stored in an airtight container.
Is it gluten free?
Yes. Most frozen tater tots are gluten free, but always check the label to make sure. Most sausage is also gluten free, but once again, it’s always important to check the label. All other ingredients in the recipe are naturally gluten free.

Tater Tot Breakfast Casserole
Ingredients
- ½ cup onions, diced
- 1 pound breakfast sausage, hot or mild
- 6 large eggs
- 1 cup milk
- 1 teaspoon salt
- 1 teaspoon black pepper
- 1 tablespoon hot sauce
- 4 ounce can diced green chilies
- 2 cups Cabot Seriously Sharp Cheddar Cheese, shredded – divided
- 28 ounce bag frozen tater tots
Instructions
- Preheat the oven to 375°F.
- Add the olive oil to a large skillet on the stove over medium high heat.

- Add the breakfast sausage to the skillet, crumble and cook for 8-10 minutes.
- Remove the onions & sausage from the heat and set aside.
- In a large mixing bowl, whisk the eggs, milk, salt, pepper and hot sauce together.
- Stir in the diced green chilies, 1 cup of the shredded cheddar cheese and the cooked sausage and onion.
- Spray an 8" x 10" baking dish with cooking spray.
- Pour the egg mixture into the baking dish.
- Arrange the tater tots in an even layer on top.
- Place in the oven to bake uncovered for 50 minutes.
- Remove from the oven and sprinkle with the remaining cup of shredded cheddar cheese.
- Place back in the oven for 10 minutes.
- Remove from the oven and serve immediately.
Notes
- Gluten Free: this recipe is gluten free. Always double-check the label on the tater tots and sausage to make sure they’re gluten free.
- Vegetarian: to make this recipe vegetarian, saute 2 cups of vegetables with the onions and omit the sausage. I recommend diced bell peppers, sliced mushrooms and/or spinach. You can also substitute soy chorizo for the sausage and cook the same as you would the sausage.
- Make Ahead: this casserole can be made up to 12 hours in advance, covered and stored in the refrigerator until ready to bake.
