For years, I’ve used my homemade steak seasoning or Italian seasoning for grilled and roasted vegetables. Heading into grilling season this year, I decided that my veggies needed their own seasoning!
For this seasoning mix, I combined the spices in my steak seasoning with the herbs in my Italian seasoning, and came up with a veggie seasoning that adds so much flavor to any vegetables!
Whether you’re stir frying the veggies on the stove, roasting them in the oven, or tossing them on the grill, this seasoning blend will be your best friend when making flavorful veggies. This mix is great on everything from zucchini, to broccoli, to asparagus, and pretty much every vegetable in between.

Ingredients
- Garlic powder (or granulated garlic) – the only difference between granulated garlic and garlic powder is that the powder has been ground finer, than the granulated garlic. I prefer to use granulated garlic because it’s less likely to clump over time, than garlic powder.
- Onion powder (or granulated onion) – the only difference between granulated onion and onion powder is that the powder has been ground finer, than the granulated onion. I prefer to use granulated onion because it’s less likely to clump over time, than onion powder.
- Black pepper – this common spice adds a peppery flavor to this spice mix, with added notes of pine and citrus.
- Dried thyme – the lemony notes of thyme add a bright, fresh flavor to the seasoning mix.
- Dried oregano – this earthy, aromatic herb adds a delicious peppery bite to this spice blend.
- Dried basil – this herb is aromatic and mostly sweet, with a touch of savory and notes of pepper.
- Dried parsley – even in it’s dried form, parsley adds a bright, fresh flavor to this seasoning mix that pairs well with the other spices.
- Paprika – while I use traditional paprika to make this vegetable seasoning, if you’d like to add a little smokiness to the flavor, feel free to use smoked paprika instead. Or to add a slight sweetness to the mix, use sweet paprika.
- Sea salt (or kosher salt) – you can use both sea salt and kosher salt interchangeably when cooking. I prefer either kosher or sea salt, over table salt, because of their coarse texture and superior flavor.
Instructions
- Combine all of the ingredients in a small bowl.
- Store in an airtight container in the pantry for up to 6 months.

Recipe tips
- This recipe makes 10 tablespoons of vegetable seasoning. If you’d like to make a double batch of the mix, simply click on the 2X button in the recipe card below. The ingredient amounts in the recipe card will automatically update to accommodate the new serving size.
- The seasoning will stay good, stored in an airtight container in a cool, dry place, like the pantry, for up to 6 months. After that the spice blend will not “go bad” but as dried herbs and spices sit longer, they begin to lose their flavor.
- I recommend storing the seasoning mix in an 8 ounce mason jar. If doubling the recipe, use a pint size or 16 ounce mason jar. I recommend labeling the vegetable seasoning with a date and using the seasoning mix within 6 months.

Ways to use it
This vegetable spice mix is a great way to season grilled, roasted or stir fried vegetables.
No matter which method you choose to cook the vegetables, you’ll want to toss 1 pound of vegetables with 1 tablespoon of olive oil and 1 tablespoon vegetable seasoning.
For grilled vegetables, I recommend grilling the veggies on a grill pan, or a large piece of nonstick foil. This way, the veggies won’t slip through the grill grates. If grilling larger vegetables like portobello mushrooms or large slices of zucchini, you can grill them directly on the grill grates. The time to grill the vegetables will vary per vegetable. Plan for at least 8-10 minutes, tossing the veggies throughout the cooking time.
For roasted vegetables, I recommend roasting them at a high temperature, somewhere between 400-425°F. This will give the veggies a nice texture. I always roast vegetables on a foil-lined large sheet pan for easy clean up. The time to roast vegetables will vary depending on the type of vegetable, and how it’s cut before roasting. Plan for around 15-20 minutes for most vegetables.
For stir fried vegetables, you’ll want to get a skillet nice and hot on the stove before adding the vegetables. This is the fastest way to cook vegetables. It’s great for an easy meal, paired with stir fry sauce and cooked rice. Most veggies will cook in 5-8 minutes when stir fried in a hot pan.
You can also use this seasoning mix to make a delicious veggie dip for raw veggies, like cherry tomatoes, broccoli, baby carrots and celery.
The best veggies for cooking
While you can use this seasoning for all kinds of vegetables, here are a few of my favorite veggies to cook on the grill, in the oven, or in a stir fry.
- Mushrooms – portobello mushrooms are great on the grill. White button mushrooms, baby bella mushrooms or shiitake mushrooms are delicious in a stir fry.
- Peppers – bell peppers, sweet mini peppers, poblano peppers, or jalapeno peppers are all delicious on the grill, roasted in the oven or stir-fried.
- Onions – you can dice any type of onion into large cubes and cook them on the grill, roast them in the oven, or add them to a stir fry.
- Zucchini – is delicious cut into spears and cooked on the grill. It’s also great diced and cooked in the oven, air fryer or stir fried. Follow this link for how to cook zucchini 4 ways.
- Broccoli and cauliflower – delicious roasted, or as part of a stir fry.

- Carrots – I love oven roasted carrots, but this vegetable is also great in a stir fry!
- Potatoes – use this spice mix to flavor these cheesy grilled potatoes, roasted baby potatoes or smashed potatoes. Or simply cube up your favorite potatoes, like sweet potatoes, red potatoes, or russet potatoes, and toss them with olive oil and this seasoning blend. Roast them in the oven, or air fry them.
