Pomegranate Coconut Mojito Punch

Holiday season is upon us and it also happens to be my birthday today!
I started off the birthday celebration on Friday night by mixing up this festive Pomegranate Coconut Mojito Punch.
I’ve always loved mojitos, but muddling mint, limes and sugar for each individual drink can be exhausting, which is why I created this mojito punch recipe!
I added pomegranate seeds and pomegranate Italian soda to the mojito punch to give it some bubbles, a bright beautiful color and a dash of one of my favorite seasonal flavors!
This mojito punch is the perfect bright and festive drink for the holidays, but also light and refreshing enough to make it the perfect cocktail for enjoying year-round!
Ingredients
- ½ cup fresh mint
- 4 limes (sliced)
- ½ cup sugar
- ½ cup pomegranate seeds – divided
- 1 (32 oz) bottle coconut water
- 2 cups white rum
- 3 cups Pomegranate Italian Soda
- Mint sprigs and lime wedges for garnish
Add the fresh mint, sliced limes and sugar to the bottom of a pitcher or punch bowl.
Muddle with the back of a large spoon or a muddler until the sugar has dissolved into the lime juice.
Add ¼ cup pomegranate seeds.
Muddle the pomegranate seeds, then add the coconut water, rum, and pomegranate Italian soda. Stir all of the ingredients together.
Fill the pitcher with ice then pour to serve immediately, or place in the refrigerator without ice until ready to serve. Before serving, garnish the pitcher or punch bowl with sliced limes, fresh mint and the remaining ¼ cup pomegranate seeds.
Serve in glasses garnished with mint sprigs and lime wedges.

By the way, I did half the sugar bc the Italian soda is sweet. But that’s a matter of personal preference.
This is delicious and refreshing! I was able to make one pitcher that serves as both cocktail (just add rum to each glass) and mocktail (serve as is or with tonic water). Perfect christmasy colors for this time of year!
