One Pot Teriyaki Shrimp Lo Mein

Teriyaki Shrimp is combined with fresh vegetables and lo mein noodles in this easy one pot recipe, made in under 30 minutes, perfect for weeknight dinners!

I don’t know about y’all, but I love a good one pot meal. Easy cooking, easy clean-up, now that’s my kind of dinner!
Today’s one pot meal takes teriyaki shrimp and broccoli, and combines it with delicious lo mein noodles for an Asian style one pot pasta dish that tastes amazing! It only takes 30 minutes to make start-to-finish, so you can have dinner on the table in no time.
Easy, flavorful, and a new twist on a teriyaki shrimp recipe, everything you could want in a one pot pasta dish!
Ingredients
- Sesame oil
- Red bell pepper – sliced into strips.
- Garlic cloves – I recommend fresh minced cloves for the best flavor.
- Serrano chili – these chilis are an optional addition. They are very spicy, so omit them if you don’t like spice!
- Teriyaki sauce – click the link to learn how to make my easy homemade teriyaki sauce in just 10 minutes! You can also use bottled sauce, purchased at the grocery store, but if you have an extra 10 minutes, I recommend making the homemade version. The flavor is delicious and you can make it in advance and store it in the fridge for up to 2 weeks. It’s made with a simple combination of soy sauce, mirin, brown sugar, garlic and ginger.
- Lo mein noodles – these will be found at most major grocery stores in the Asian section. If you can’t find them, you can use spaghetti noodles in their place.
- Chicken broth – make your own at home with bouillon, or purchase premade broth at the grocery store.
- Broccoli florets
- Shrimp – peeled and deveined, with the tails on or off, your choice. It does make it easier to eat if you remove the tails before starting the recipe.
- Green onions
Instructions

- Cook the veggies. Pour sesame oil into a large dutch oven on the stove over medium-high heat. Add sliced bell pepper and broccoli, cook 3-4 minutes, then add minced garlic and sliced serrano chilis. Cook for an additional minute. Pour the teriyaki sauce in the pot and stir to coat the vegetables in the sauce.
- Add the noodles and broth. Break the lo mein noodles in half, then add them to the pan. Pour the chicken broth over the noodles, making sure they’re fully covered in the liquid. Bring the broth to a boil. Reduce the heat to medium-low, cover the pot and cook for 10 minutes.
- Add the shrimp. Remove the lid and add the peeled and deveined shrimp. Place the lid back on the pot and cook for an additional 3-4 minutes, or until the shrimp turn pink. Remove from the heat, toss everything together, then garnish with sliced green onions and sesame seeds before serving.
Time saving tip
Purchase shrimp that has already been peeled and deveined. This will save you at least 10 minutes if you don’t have to peel and devein them yourself!

One Pot Teriyaki Shrimp Lo Mein
Ingredients
- 1 tablespoon sesame oil
- 1 cup red bell pepper, sliced
- 1 cup broccoli florets
- 4 cloves garlic, minced
- 1 serrano chili, thinly sliced – optional – omit if you don’t like spicy!

- 10 ounces lo mein noodles
- 2 ½ cups chicken broth
- 1 pound shrimp, peeled and deveined
- 2 green onions, thinly sliced
- ½ teaspoon sesame seeds
Instructions
- Add the sesame oil to a large skillet or dutch oven on the stove over medium-high heat.
- Add the bell pepper and broccoli, saute 3-4 minutes, add the garlic and serrano chili, saute for an additional minute. Add the teriyaki sauce and stir to coat the vegetables.
- Break the lo mein noodles in half, then add to the pot. Pour the chicken broth over the noodles. Make sure the noodles are covered in liquid, then bring the liquid to a boil.
- Reduce heat, cover the pot, and cook for 10 minutes.
- Remove the lid and add the shrimp. Place the lid back on the pot and cook for an additional 3-4 minutes, or until shrimp turn pink.
- Remove from the heat, toss everything together, then top with the sliced green onions and sesame seeds before serving.
Notes
- Purchase shrimp that has already been peeled and deveined. This will save you at least 10 minutes if you don’t have to peel and devein them yourself!

When you could have sworn you had shrimp in the freezer… Lol. I tried this without shrimp and it came out delicious! As with most recipes I find there will always be ingredients that I don’t have but I don’t sweat the small stuff. Substituted EVOO for sesame oil. I didn’t have green onion on hand so I sauteed white onion with the garlic. I also didn’t have Serrano chilies but i did have dried chipotle pepper. I used just enough for a kick! I also used Japanese soba noodles instead of lo mein noodles but you wouldn’t notice unless you’re a noodle connoisseur which I am not. What would I do differently? Besides make sure I have shrimp in the freezer? I would try the homemade teriyaki sauce recipe. The store bought ones have too much sugar. Nonetheless this might be a new go to!
