Peanut Butter Popcorn Balls

This gluten free recipe for popcorn balls combines kettle corn with peanut butter cereal, creamy peanut butter, honey & marshmallows for a delicious treat!
Is it just me or do you think of popcorn balls and Halloween hand-in-hand? It’s kind of like stuffing and Thanksgiving.
Why do we not eat popcorn balls and stuffing year-round? I mean, they’re both really delicious! I think I’m going to start the year-round stuffing and popcorn ball trend, who’s coming with me? 😉
While thinking of new fall recipes, including ideas for fall holidays, like Halloween, I came up with my own little twist on popcorn balls!
I started by adding peanut butter puffs cereal for a nice little crunch, then added creamy peanut butter, honey and marshmallows to hold it all together!
I love the extra peanut butter goodness that the cereal adds to these popcorn balls, and the cereal is gluten-free, making this a delicious gluten-free treat that everyone can enjoy!
Ingredients
- 3 cups popped kettle corn
- 2 cups Gluten Free Peanut Butter Puffs Cereal
- ½ cup honey
- ½ cup peanut butter
- 1 cup mini marshmallows
Place the kettle corn and cereal in a large bowl.
Bring the honey and peanut butter to a boil in a saucepan on the stove over high heat. Reduce heat, add the marshmallows, cook 1-2 minutes, or until marshmallows have melted into the mixture. Pour over the popcorn and cereal.
Gently toss everything together.
When cool enough to handle (app. 10 minutes), form into 10 popcorn balls.
A super easy and scrumptious treat that is perfect for kids! Whip these up for a Halloween party or an afternoon treat, either way, I know they’ll be a hit with any little peanut butter fan!
