Ingredients

All of the ingredients for this salsa are vegan and gluten free. For the full ingredient list, with measurements, scroll to the recipe card below.

  • Fresh pineapple – sure, you could make this salsa with diced canned pineapple, but once I show you how easy it is to dice up a fresh pineapple, you’ll want to use it every time!
  • Red bell pepper – or your favorite color of bell pepper. I like to use red in this salsa because it’s slightly sweeter than green or yellow bell peppers and pairs well with the pineapple.
  • Red onion – this is my preferred color of onion to use in this salsa recipe because of it’s vibrant color and bright flavor. You could also use a white onion, if you prefer.
  • Jalapeno – to balance out the sweetness of the pineapple and add a hint of spice to the salsa. If you want a spicier salsa, use a serrano pepper instead of the jalapeno pepper.
  • Lime juice – I always recommend fresh lime juice for the best flavor.
  • Cilantro – if you don’t like the taste of cilantro, you can use flat-leaf parsley in it’s place.
  • Salt – to season the salsa, and bring out all of the flavors.

How to cut a pineapple

Follow the step-by-step photos and instructions below to learn how easy it is to dice up a fresh pineapple.

  1. Remove the crown from the top of the pineapple, then slice off the bottom stem off the pineapple.
  2. Cut the pineapple into four quarters.
  3. Stand up each quarter of pineapple on a cutting board and slice the middle core from each piece of pineapple. Discard the core.
  4. Lay the pineapple down on the outer skin, then use a knife to make long cuts in each direction to form a grid pattern on the pineapple. Use a sharp knife to slice between the pineapple and the rind to remove the pieces of pineapple from the outer skin.

Easy as that, now you know how to cut and dice a pineapple. Now let’s make salsa!

Instructions

  1. Add 3 cups of the fresh diced pineapple to a large mixing bowl. This will be about half of a large pineapple. Add diced red bell pepper, red onion, jalapeno, lime juice, cilantro, and salt to the bowl.
  2. Use a spatula to gently stir everything together. Serve immediately, or cover and store in the fridge until you’re ready to serve the salsa.

The salsa will stay good, stored in an airtight container, in the refrigerator for up to 3 days.
