Pineapple Salsa

It only takes 10 minutes to slice up fresh pineapple and veggies to make this delicious Pineapple Salsa recipe! It’s the perfect salsa to top grilled chicken bowls, fish, or pork tacos. This flavorful salsa will take your tastebuds on a trip to the tropics every time you eat it!

Pineapple salsa is a refreshing spin on salsa that you need in your life! It pairs well with so many dishes, from Mexican recipes, to Caribbean classics. I love it on pork tacos and salmon tacos. It’s also delicious served over grilled fish or chicken. You can make it a part of these Grilled Chicken Teriyaki Bowls, or simply dip it up with tortilla chips.
It’s a versatile salsa that’s so easy to make. I’m going to show you step-by-step how to dice up a fresh pineapple. And once you have that down, you’re going to be mixing up this salsa in no time!
Ingredients

- Fresh pineapple – sure, you could make this salsa with diced canned pineapple, but once I show you how easy it is to dice up a fresh pineapple, you’ll want to use it every time!
- Red bell pepper – or your favorite color of bell pepper. I like to use red in this salsa because it’s slightly sweeter than green or yellow bell peppers and pairs well with the pineapple.
- Red onion – this is my preferred color of onion to use in this salsa recipe because of it’s vibrant color and bright flavor. You could also use a white onion, if you prefer.
- Jalapeno – to balance out the sweetness of the pineapple and add a hint of spice to the salsa. If you want a spicier salsa, use a serrano pepper instead of the jalapeno pepper.
- Lime juice – I always recommend fresh lime juice for the best flavor.
- Cilantro – if you don’t like the taste of cilantro, you can use flat-leaf parsley in it’s place.
- Salt – to season the salsa, and bring out all of the flavors.
How to cut a pineapple
Follow the step-by-step photos and instructions below to learn how easy it is to dice up a fresh pineapple.
- Remove the crown from the top of the pineapple, then slice off the bottom stem off the pineapple.
- Cut the pineapple into four quarters.
- Stand up each quarter of pineapple on a cutting board and slice the middle core from each piece of pineapple. Discard the core.
- Lay the pineapple down on the outer skin, then use a knife to make long cuts in each direction to form a grid pattern on the pineapple. Use a sharp knife to slice between the pineapple and the rind to remove the pieces of pineapple from the outer skin.
Easy as that, now you know how to cut and dice a pineapple. Now let’s make salsa!
Instructions
- Add 3 cups of the fresh diced pineapple to a large mixing bowl. This will be about half of a large pineapple. Add diced red bell pepper, red onion, jalapeno, lime juice, cilantro, and salt to the bowl.
- Use a spatula to gently stir everything together. Serve immediately, or cover and store in the fridge until you’re ready to serve the salsa.
The salsa will stay good, stored in an airtight container, in the refrigerator for up to 3 days.

This salsa is a great appetizer or side dish served with tortilla chips. It’s also delicious as part of a main dish. Try all of these tasty ways to use it in recipes throughout the week!
