Over the years I’ve tried many veggie burgers, from homemade, to restaurants, to pre-packaged at the grocery store, you always get one of two things, a burger filled with veggies or a vegetarian burger that’s masquerading as a meat burger, which tastes more like meat than veggies.

While I’ve had great versions of both, I tend to prefer the veggie-filled burgers. Since I’m not a vegetarian, when I eat veggie burgers I’m not trying to replace a beef or turkey burger, I’m simply looking for a super flavorful and unique way to go meatless and add more veggies to my diet!

The very first recipe I posted after joining the Instant Pot revolution in January was a simple recipe for Instant Pot Buffalo Chicken. Seriously it’s buffalo sauce + chicken y’all, so simple! The thing I love about it is that you can make a big ol’ Instant Pot of it at the beginning of the week and use it for different recipes throughout the week.

With everything from Buffalo Chicken Taco Cups to Buffalo Chicken Cheesy Penne, it’s like you’re getting an entirely new meal every night, but made in no time with the Instant Pot Buffalo Chicken you made earlier in the week!

I now took this concept and made Instant Pot BBQ Chicken. Same simple two ingredient recipe, chicken breasts + bbq sauce, made into so many meal possibilities throughout the week!

We love meatballs around our house! From Thai Peanut Turkey Meatballs served over rice, to Buffalo Honey Mustard Meatballs for gameday, to One Pot German Meatballs & Potatoes for an easy meal, there’s no shortage of meatball meals in our house!

One of my tricks for creating the perfect meatball is to combine two different meats. For this recreation of chicken marsala, I made pork and chicken meatballs. When using a lean protein like ground chicken breast, you want to combine it with a protein with a slightly higher fat content, like ground pork or beef.

A couple of weeks ago, I was really craving pizza, but I wanted something different. I started thinking of some of my other favorite meals that I could transform into a delicious pizza. The banh mi sandwich came to mind and I began to experiment!

On the first banh mi pizza experiment I placed the jalapenos, onions and carrots with the pork on the pizza before baking. The family consensus was that to be more true to a real banh mi sandwich, the toppings should be raw and added after the pizza was baked. I also did a little experimenting with the sauce and about 5 pizza taste-tests later, the perfect banh mi pizza was born!

Ham hash is something my Dad used to make me for breakfast growing up. Diced potatoes, onions and ham, with a little cheese sprinkled on top at the end. It was simple and my absolute favorite as a kid! As an adult, I partnered up with my friends at Smithfield, to kick up my ham hash a bit, adding a few different ingredients to make three different varieties.

First up is the Italian Ham Hash which features basil pesto, tomatoes and mozzarella cheese. It’s like taking your favorite pasta dish and making it into your new favorite breakfast potato dish!

Next up is the Mexican Ham Hash featuring jalapenos, a dash of chili powder, pepper jack cheese and fresh avocado. This one is a personal favorite as I love the Mexican flavors and I can never say no to a breakfast topped with avocado!

Finally, the Greek Ham Hash featuring mushrooms, oregano, sun dried tomatoes and feta cheese. This dish will make you feel like you’re having breakfast in the Mediterranean! The creamy feta on top is my favorite addition to this easy ham hash recipe!

One of my favorite things to do in the Instant Pot, is to take my most popular slow cooker recipes and make them into quick and easy Instant Pot recipes!

Since tacos are always a good idea, I took my Slow Cooker Sriracha Honey Pulled Pork Tacos and made them in the Instant Pot. The entire recipe takes under 45 minutes to make, with only about 10 minutes of active cooking time.

This three cheese baked ziti recipe was inspired by my favorite pizza at Jimmy and Joe’s Pizzeria in Phoenix. I always order it topped with dollops of ricotta cheese and it adds this amazing layer of creaminess to the pizza.
