Baked chicken breasts in beige casserole dish, covered in buffalo bbq sauce, sitting on top of red and white striped towel

One of my families favorite easy dinners growing up was BBQ baked chicken and baked potatoes. It was so easy to pour bbq sauce over chicken and toss it in the oven with a few potatoes to make a dinner for the entire family in about 5 minutes.

Of course I added buffalo sauce to this easy family favorite, because that’s what I do!

You can make an entirely “buffalo-ed” meal by adding Buffalo Blue Cheese Mashed Potatoes, Spicy Buffalo Macaroni Salad, Buffalo Potato SkinsBuffalo Mac & Cheese or Buffalo Cheddar Biscuits on the side of this BBQ Buffalo Chicken!

Thai Coconut Soup with Potstickers

Thai coconut soup is deliciously flavorful & easy to make in just 29 minutes! In this recipe, I added chicken potstickers for a fun twist on classic Tom Kha soup!

Thai coconut soup with potstickers in bowl, garnished with fresh lime wedge, green onions and cilantro, with copper spoon in bowl and fresh cilantro behind bowl

I’m all about combining two things I love into one dish!

Thai peanut sauce and roasted sweet potatoes, tomato basil bruschetta and grilled chicken, and now Thai coconut soup and potstickers!

Whenever we go out for dinner, there’s an 8 out of 10 chance I’m going to try to convince Kurt to go to Koon Thai. It’s my favorite Thai restaurant and one of my overall favorite restaurants in San Diego!

They make the most delicious pan fried roti bread, curries and noodle dishes. They also make the best Tom Kha soup I’ve ever had! After our last visit, I decided it was time to try making my own Tom Kha soup at home.

What is Tom Kha Soup?

Tom Kha soup is a Thai coconut soup. It’s made with coconut milk, lemongrass, Thai chili peppers, cilantro, mushrooms, fish sauce and lime juice. While it’s typically made with chicken, you can also find versions with shrimp, pork or tofu.

What is the difference between Tom Kha and Tom Yum Soup?

Tom Yum Soup is made with a base of boiled meat, such as shrimp or pork, water and herbs. It is sour and spicy in flavor. Tom Kha Soup is made with a coconut milk base and is more sweet and spicy in flavor, than sour.

One thing I love about serving this punch bowl at parties is that the drinks are pre-made and everyone can serve themselves whenever they’d like!

Cookie cups have kind of become my thing y’all!

I mean, why make a boring ol’ flat cookie, when you can make a cute little cookie cup and fill it with something totally delicious?

That was my thought when I first made Chocolate Chip Cookie Cups filled with Nutella, then Red Velvet Cookie Cups filled with Cream Cheese Frosting, then again when I made Pumpkin Cookie Cups filled with Salted Caramel!

These bite sized treats are perfect for gifting to friends, serving at parties or for a sweet snack to keep around the house!

With the holiday season in full swing, I decided to turn my favorite winter drink into a cookie cup.

Hot Chocolate Cookie Cups are made by taking chocolate cookies, indenting them in the middle when they’re hot out of the oven and filling them with marshmallow creme. They’re fun to make and even more fun to eat!

Speaking of the best, this is seriously the best beef stroganoff I’ve ever had! Kurt said that anytime I ask what he wants for dinner from now on, he will say this dish!

I used a beef chuck roast for this recipe, making it a cross between a pot roast and beef stroganoff. The beef is so tender and flavorful, the sauce, so creamy and the egg noodles tie the whole thing together. The best part is, everything cooks in the Instant Pot making clean-up a breeze!
