Whether hosting a dinner at home for friends, or Christmas dinner with my family in Oklahoma, when it comes to entertaining for the holidays, I love to serve an after dinner cocktail.

A couple of months ago, I stumbled upon Halcyon, a new hybrid coffee/bar/restaurant in the East Village neighborhood of downtown San Diego.

I was with a group of friends on a Friday night, so we asked for the cocktail list. I was so ridiculously excited when they presented me with an entire menu of coffee cocktails. As a die-hard coffee-loving girl, I couldn’t wait to try one of these cocktail creations!

I was immediately drawn to the “Long Island Iced Coffee” – I was both intrigued and excited about trying this – I figured that it would either be the best thing ever or totally weird – IT WAS THE BEST THING EVER!

My neighborhood bar where “everybody knows my name.” But literally, I’ve been asked if I work there because people see me there so often!

It’s a gem and I’m a creature of habit. What can I say? I find something I love, I stick with it.

One of the things that keeps me coming back time and time again is their Prosecco Mint Sangria. It’s amazing.  So amazing that I decided to re-create it at home last weekend and share my version with you all!

I should also tell you that I consider any day which ends with the letter “Y” a good day for a mojito 😉

Cherry Mojitos

My sweet friend Charlotte is getting married in 10 days. She came over last night for a little pre-wedding relaxation. I thought this would be the perfect beverage to help her lighten up and enjoy some time away from the wedding craziness!

Did you know that cherries actually help calm the nervous system? So cool, right?

Sparkling Cherry Lime Mojito Punch Ingredients

Ingredients

  • ¼ cup fresh mint
  • 3 limes (sliced)
  • ¼ cup sugar
  • 2 cups fresh cherries (pitted)
  • 12 oz rum
  • ½ cup water
  • 750 ml sparkling lime water

Begin by adding the fresh mint and limes to the bottom of a pitcher or punch bowl.

Add the sugar, then muddle with the back of a large spoon or a muddler.

Add the cherries and muddle.

Add the rum, water and sparkling water. Mix well.

This Avocado Honeydew Melon Margarita might be the most interesting margarita you’ll ever drink!

Creamy avocado is combined with fresh honeydew melon for a super refreshing twist to a classic margarita!

While I was weary  of putting avocado in my margarita at first, I soon jumped on the bandwagon after trying this deliciously creamy treat, so why not jump on it with me and try something new this weekend? I promise that you will not be disappointed!

Avocado Honeydew Melon Margarita Ingredients

Ingredients

  • 1/2 cup honeydew melon (chopped)
  • 1/2 avocado
  • 1/2 lime (juiced)
  • 2 oz silver tequila
  • 1 oz triple sec
  • 1 oz agave nectar
  • 1 oz water

This cucumber jalapeno margarita is super fresh with a little kick, making it the perfect poolside cocktail for the warm summer months. Serve it with a side of Grilled Pineapple Tomatillo Guacamole for a happy union of two very delicious things!

  • 1/4 cup sliced cucumber
  • 1/2 jalapeño, sliced and de-seeded

Just like yesterday when we combined blackberries and jalapeños, today we’re combining another fruit with another pepper for a sweet and spicy, refreshing cocktail!

Mango Serrano Chili Margarita Ingredients

Ingredients

  • 1/2 mango (diced)
  • 1 serrano chili (de-seeded and diced)
  • 2 oz silver tequila
  • 1 oz triple sec
  • 1 oz agave nectar
  • 1/2 cup ice

Start by muddling the mango and serrano chili in a shaker.

Add the tequila, triple sec, agave nectar and ice to the shaker.

Shake well then pour into a salt rimmed glass and garnish with a lime.

Sip this cocktail on the patio in the middle of summer to cool down and relax! I promise that you won’t be able to have just one 😉

My favorite time of year is the week when Pumpkin Beer hits the shelves and college football begins! I somehow managed to take this glorious week and my favorite beer and make it even better in this delicious concoction that transforms a classic dessert favorite into an adult style fall treat with a pumpkin twist!

Ingredients (makes 1 float)

  • 3 scoops vanilla ice cream
  • 1 cup pumpkin ale
  • 1/2 tsp cinnamon

Scoop the ice cream into a tall glass. Pour the pumpkin ale over the ice cream and top with a dash of cinnamon.

This dessert is perfect for the beginning of fall when it’s still warm enough outside to enjoy ice cream, but fall is in the air, so it also feels acceptable to begin drinking pumpkin beer! And you thought root beer floats couldn’t get better? Well, they just did!

  • 2 shots coffee liqueur
  • 2 shots irish cream liqueur
  • ½ cup milk
  • dash cinnamon
  • ¼ cup pumpkin
  • 4 shots pumpkin pie vodka

Add all ingredients to shaker with ice and shake well.  Strain into a glass and top with whipped cream.

We’re going to call this two-for-tuesday, two posts for the sake of two delicious fall cocktails!

In this new fall favorite rich apple cider is paired with sparkling champagne, vodka, maple syrup, cinnamon and nutmeg, I like to call it the Fall-Mimosa!

Apple Cider Champagne Punch Ingredients

Ingredients

  • ½ apple cider
  • 1 shot vodka
  • Dash cinnamon
  • Dash nutmeg
  • 1 tsp maple syrup
  • ½ cup champagne

Combine the cider, vodka, cinnamon, nutmeg and maple syrup in a shaker with ice.  Shake well and pour into champagne glass.  Top with champagne and garnish with skewered apple pieces or cinnamon sticks.

If you’re like me, one of your favorite parts of Fall is all the pumpkin goodness that starts popping up around this time of year, including the ever-so-popular Pumpkin Spice Latte.

In this martini I combine Pumpkin Pie Vodka with Coffee Liquor for a martini that is sure to give you that boost you love from a latte with a little kick from the vodka!

Pumpkin Spice Latte Martini Ingredients

Ingredients (makes 1 martini)

  • 2 shots pumpkin pie vodka
  • 2 shots coffee liqueur
  • dash ground ginger
  • dash cinnamon
  • dash nutmeg

Combine all ingredients in a shaker with ice and shake well.

Strain into a martini glass rimmed with crushed graham crackers and serve with cinnamon stick to garnish.
