Instant Pot Beef with Tomato Basil Bruschetta

One of my favorite things about the Instant Pot is the fact that you can sear meat directly in the Instant Pot before you pressure cook the dish, so that you’re left with only one pot to clean up after the meal!
While this Instant Pot Beef Ragu recipe is one of my favorite meals and can be eaten year-round, I wanted to try something new, light and fresh for summer, which is why I created this Instant Pot Beef with Tomato Basil Bruschetta.
Instant Pot Beef with Tomato Basil Bruschetta
To make this Instant Pot Beef recipe, start by marinating a top sirloin steak with olive oil, balsamic vinegar, garlic, basil, salt and pepper. The beef can be marinated for 1 hour, or up to 8 hours.
After the beef has marinated, sear it in an Instant Pot, then pressure cook the beef for 10 minutes. Remove the beef, rest for 5-10 minutes, then slice. Toss the tomato basil bruschetta together and spoon on top of the sliced beef.
Serve the Beef Bruschetta over zucchini noodles, traditional pasta or with a side salad.
Can you cook frozen meat in an instant pot?
You can cook frozen meat in an instant pot. For this Instant Pot Beef recipe, you’ll want to marinate the meat for 8 hours in the refrigerator, if the meat is frozen when you begin marinating it. Marinating frozen meat for less than 8 hours will not allow the meat to thaw enough to soak the flavors of the marinade into the meat.
How long do you cook a steak in a pressure cooker?
A top sirloin steak should be cooked on high pressure in a pressure cooker for 10 minutes.

Instant Pot Beef Bruschetta
Ingredients
Instant Pot Italian Beef
- 1 lb top sirloin steak
- 2 tbsp olive oil
- 2 tbsp balsamic vinegar
- ½ tsp sea salt
- ½ tsp black pepper
- 3 cloves garlic, crushed
- 2 tbsp fresh basil, chopped
- 1 tbsp olive oil
Tomato Basil Bruschetta
- 3 Roma tomatoes, chopped
- ¼ cup red onion, chopped
- 2 cloves garlic, minced
- 1 tbsp fresh basil, chopped
- 2 tbsp extra virgin olive oil
- 1 tbsp balsamic vinegar
- ¼ tsp salt
- ¼ tsp black pepper
- 2 tbsp parmesan cheese, grated - optional topping
Instructions
Instant Pot Italian Beef
- Add the sirloin to a large plastic bag with 2 tbsp olive oil, balsamic vinegar, sea salt, black pepper, garlic and basil and marinate for up to 8 hours, I would recommend at least an hour.
- Press the saute button on the Instant Pot, use the adjust button to set on the “normal” setting.
- Add 1 tbsp olive oil to the Instant Pot, when the display says “hot”, add the sirloin and sear for 1-2 minutes per side.
- Press the Keep Warm/Cancel button on the Instant Pot.
- Place the lid on the Instant Pot and make sure the steam release is set to “sealing”. Press the “manual” button and set the Instant Pot to high pressure, then use the +/- buttons to set the Instant Pot to 10 minutes.
- When the cooking time is up, turn off the Instant Pot and wait 5-10 minutes, then release any remaining pressure before unlocking the lid.
- Remove the sirloin from the instant pot and let rest 5-10 minutes before slicing.
Tomato Basil Bruschetta
- While the sirloin is in the Instant Pot, combine all of the bruschetta ingredients in a medium mixing bowl.
- Spoon the bruschetta over the sliced sirloin and serve.
