I love tossing pesto with tortellini, stuffing it in chicken and adding it to potato salad.

The best part about pesto is how you can make an easy, flavorful meal with it in less than 30 minutes. I combined kale pesto with pasta, sun dried tomatoes and goat cheese to make this easy pesto spaghetti recipe in just 15 minutes!

I’ve made this recipe with both traditional spaghetti and corn spaghetti, to make the recipe gluten free. Both versions work great!

And I save the other loaf for making sandwiches throughout the week. I mean, you could eat Rosemary Tri Tip French Dip Sandwiches on another type of bread. But why would you want to?

One of my favorite things about pesto is it’s versatility. You can easily toss it on a pizza, pasta or eggs. Add it to a sandwich, grilled chicken or a salad.

Toss it in risotto or spread it on baked salmon. The options really are endless!

My other favorite thing about pesto is how easy it is to make. Toss all of the ingredients in a food processor and you’ve got delicious homemade pesto in just 5 minutes!

This kale pesto is not only easy, delicious and versatile, it’s also packed with health benefits!

Kale helps with cancer prevention, lower cholesterol and lower blood pressure.

One cup of kale contains 36 calories, 5 grams of fiber and 15% of the daily requirement of calcium. It also contains 15% vitamin B6, 40% magnesium, 180% vitamin A, 200% vitamin C and 1,020% vitamin K.

It is also a good source of five minerals, copper, potassium, iron, manganese, and phosphorus.

This recipe has 4 cups of kale in it. That’s a lot of vitamins!

Creamy Vegetarian Tortellini Soup

Creamy vegetarian Tomato Spinach Tortellini Soup is made with refrigerated cheese tortellini cooked in a creamy, cheesy tomato sauce. It’s made in just 15 minutes for a quick and easy Italian soup recipe!

One of the things you’ll always find in my freezer is a bag of refrigerated cheese tortellini. It can be cooked straight out of the freezer in just a few minutes and turned into an easy weeknight meal!

I’ve used this cheese tortellini over the years to make Buffalo Chicken Cheesy Tortellini. I’ve also used it to make One Pot Vegetarian Pesto Tortellini. Both are easy meals made in 29 minutes or less!

Today I’m incorporating the delicious tortellini into a new scrumptious soup recipe that’s made in just 15 minutes! That’s right creamy, cheesy tomato basil tortellini soup is made from start to finish in under 30 minutes.

That’s less time than watching an episode of Friends on Netflix! And it’s so easy, you can totally catch up with Ross, Rachel and the whole gang while preparing this soup!

Homemade fajita seasoning is easy to make with this simple 8 ingredient gluten free and whole 30 recipe. It’s perfect for steak, vegetables, shrimp or chicken fajitas!

I love making my own seasonings at home! It has so many benefits vs. buying store bought pre-made seasonings.

  1. It’s cheaper! Check out the bulk spice section at your local grocery store for spices at a fraction of the cost. The commercial size spices at Costco, Smart and Final or on Amazon are also great for making your own seasoning blends. You can then make spice blends for an entire year at a fraction of the cost!
  2. You know exactly what’s in it. No hidden ingredients. No secret products that I can’t pronounce containing gluten or sugar!
  3. Making a big batch of your own seasoning blends at home means you always have them on hand.

You’ll always find Italian Seasoning, Taco Seasoning and French Onion Dip Mix stocked in my pantry.

When I met Kurt, he lived on a cereal and fajitas diet most of the time. Needless to say, his diet has gotten quite the upgrade over the last 4 years! Even though I’ve incorporated a lot of new recipes into his weekly diet, he still loves his fajitas.

We make chicken fajitas, steak fajitas and veggie fajitas regularly for dinner. With this homemade Fajita seasoning, it’s easy to make any night fajita night!

Spinach Artichoke Hummus

Spinach artichoke dip is given a healthy twist in this vegan recipe for spinach artichoke hummus. It’s perfect as a gluten free, healthy snack or party appetizer!

Hummus is my favorite healthy snack to keep around the house. It’s filled with protein and good fats, and this particular recipe is also packed with extra vitamins from the spinach and artichokes.

Over the years, I’ve experimented with different hummus flavors. Sriracha Hummus is my favorite for when I want a little heat in my hummus! Nutella Hummus is my favorite fruit dip. And Beet Hummus is my favorite bright and beautiful dip for snacking on by the pool in the summer!

I love potatoes, Blue Cheese Mashed Potatoes, Chipotle Chili Stuffed Sweet Potatoes, Crispy Cast Iron Potatoes. No matter how you serve them, potatoes are one of my favorite veggies!

While making a Mexican Meatloaf to celebrate my Dad’s birthday in 2012, I decided that I needed the perfect potato recipe to accompany the meatloaf.

I was inspired by one of my favorite Oklahoma Mexican food restaurants, Ted’s Escondido, to make these Mexican Potatoes. On their menu, they’re called “Pappas Mexicanos” and they’re described as a delicious combination of potatoes, cream, onions and spices.

I knew that they would be the perfect side dish for the Mexican Meatloaf. So I created my own version at home!

These Mexican Potatoes have been a staple at my house ever since! I still love serving them with the meatloaf, but they’re also the perfect side dish for a number of Mexican recipes.

Serve Slow Cooked Beef Barbacoa over these mashed potatoes for a seriously scrumptious meal! Or serve them as a side on Taco Tuesday. They’re great with Chipotle Honey Pulled Pork Tacos or Vegan Grilled Veggie Tacos!

Greek Crockpot Breakfast Casserole

I love brunch! So much so that I have a group of friends nicknamed the “SBC: Sunday Brunch Crew”. I love making brunch and going out to brunch. In my world, if the question is brunch, the answer is always yes!

I’ve made so many brunch recipes over the years that it’s impossible to pick a favorite. This Meatloaf Hash definitely ranks up there though!

When it comes to sweet brunch dishes, I can never get enough Strawberry Pancakes with Cream Cheese Syrup or Salted Caramel Cinnamon Rolls.

When hosting a brunch at my house, I always like to serve at least one egg dish, a potato dish and something sweet.

I first made this Crockpot Breakfast Casserole recipe for Father’s Day 2014. I was hosting a brunch for friends and family and wanted to make recipes that could easily feed a crowd!

Since that brunch, I’ve made this breakfast casserole dozens of times. It’s not only great for a crowd at brunch, this easy breakfast casserole is perfect for meal prepping throughout the week.

Toss this casserole in the crockpot on Sunday, then reheat it for breakfast throughout the week. It’s great on it’s own or rolled up in a tortilla for a breakfast burrito.

You can also eat it as breakfast for dinner. No matter the time of day, I’m always down for breakfast foods!

Instant Pot Mushroom Risotto

The BEST Instant Pot Risotto recipe is so easy to make! Mushrooms, garlic, French onion dip mix & parmesan cheese add a ton of flavor to this tasty dish!

Risotto is one of my favorite Italian dishes. It’s rich, creamy and so delicious!

I can’t wait to make this Butternut Squash Risotto every fall! And I love serving this Cilantro Lime Pesto Risotto with Mexican food.

The one thing about risotto that I don’t like is the hands-on time it takes to make risotto. It’s not hard to make. You just have to hang out by the stove for 30-45 minutes ladling broth into the risotto. That’s what makes risotto so creamy!

I thought there was no way that Instant Pot Risotto was going to create the same creamy texture as traditional risotto. But it does!

I took me a few attempts to get the perfect rice to broth ratio down. But in the end, I created the most creamy, dreamy Instant Pot Risotto!

No more standing around the stove to get the perfect creamy risotto. Just spend 10 minutes sautéing ingredients in the Instant Pot, then pop the lid on. Pour yourself a glass of wine and relax while the Instant Pot does the work for you!

Sweet treats for breakfast are one of my guilty pleasures. And these Strawberry Pancakes with Cream Cheese Syrup are at the top of my guilty pleasure list!

Cream Cheese Syrup, yes that is an actual thing. And if not, I just made it happen!  You’re welcome! 😉

I’ve been making these homemade pancakes for years and I guarantee they’ll be the best, most fluffy pancakes you’ve ever had. You can even substitute other ingredients for the strawberries, such as blueberries, chocolate chips or sliced bananas.

Adding the cream cheese syrup is totally optionally. But I would be doing you a disservice if I didn’t highly encourage you to make the cream cheese syrup!

I like to buy the hummus and basil pesto, (if I can find it fresh in the deli section at my grocery store) then make my famous tomato basil bruschetta to go on top.

Cookie cups have kind of become my thing y’all!

I mean, why make a boring ol’ flat cookie, when you can make a cute little cookie cup and fill it with something totally delicious?

That was my thought when I first made Chocolate Chip Cookie Cups filled with Nutella, then Red Velvet Cookie Cups filled with Cream Cheese Frosting, then again when I made Pumpkin Cookie Cups filled with Salted Caramel!

These bite sized treats are perfect for gifting to friends, serving at parties or for a sweet snack to keep around the house!

With the holiday season in full swing, I decided to turn my favorite winter drink into a cookie cup.

Pumpkin Spice Apple Crumble

Today, I’m excited to share my new twist on an Apple Crumble, it’s so simple, but really takes this dessert from delicious, to absolute fall perfection! The new twist? Adding pumpkin spice to the crumble!

Pumpkin spice does not actually contain pumpkin, it’s simply the spices combined to make a pumpkin spice mix, which includes cinnamon, nutmeg, ginger, cloves and allspice.

That dinner turned out so delicious that I turned around and made it again the next day for the blog!

After Kurt took his first bite, his response was “you could open a bakery that just sells these!” They’re seriously that good, they can stand on their own up against any other fall dessert.

They’re the perfect little snack to serve at Halloween parties or to bring to a Friendsgiving celebration. I can definitely tell you that this will not be the only time I make these pumpkin cookies this fall!

Buffalo Cauliflower Tacos

Vegan Buffalo Cauliflower Tacos are a healthy, easy recipe for dinner! The buffalo cauliflower is baked, then broiled for a crispy texture. It’s then wrapped up in corn tortillas, topped with a dairy free avocado sauce and jalapeno carrot slaw, creating a totally delicious & gluten free taco recipe!

I’m never one to shy away from tacos! Breakfast Tacos, Pulled Pork Tacos or Greek Pita Tacos, there’s no such thing as “too many tacos” in my world!

When it comes to making vegan tacos, I love Butternut Squash Tacos in the fall, Grilled Veggie Chimichurri Tacos in the summer and these Buffalo Cauliflower Tacos year-round!

These tacos seriously couldn’t be easier to make!

Toss some cauliflower with buffalo sauce and roast in the oven. While the cauliflower is roasting, mix up a little jalapeno carrot slaw and blend together the avocado sauce. Once the buffalo cauliflower comes out of the oven, toss it all on a tortilla and you have one seriously scrumptious vegan taco recipe!

Homemade Taco Seasoning

Make your own taco seasoning at home to use on chicken or ground beef tacos, in taco soup or taco spaghetti! It’s easy to triple the recipe and store it in a mason jar in the pantry until ready to use. This recipe is mild, gluten free, preservative free and Whole 30 compliant!

I’ve been making this homemade taco seasoning for years. I use it in Taco Soup, Buffalo Taco Spaghetti, Taco Croissants, simple ground beef tacos and so many other recipes!

I always make a big batch to keep on hand, along with my homemade Italian SeasoningFrench Onion Dip Mix and Fajita Seasoning.

The seasoning mixes are stored in half pint mason jars in the pantry, so they’re always ready to use when I need them for a recipe.

Raise your hand if you love picnics! Living in San Diego with almost perfect weather year-round, we love doing picnics at the beach and the parks in our neighborhood.

Sometimes, we wrap up Chicken Fajita Burritos and take those on our picnic (so very So Cal of us!), other times we just grab a baguette, cheese, crackers and fruit and make it a charcuterie plate picnic and sometimes we invite friends and make it a potluck picnic, which is perfect for bringing these mini pies, also known as picnic pies (fitting!) or hand pies. Basically they’re an individual, hand-held pie that’s easy to transport!

Over the years I’ve turned hundreds of friends and family members on to the deliciousness that is a Shishito Pepper! Ok, maybe that’s a slight exaggeration, but lets just say I’ve introduced a lot of people to these amazing little peppers and everyone has loved them!

What are shishito peppers?

Shishito peppers are a sweet pepper from East Asia, often served as a starter at popular sushi restaurants such as Nobu, Ra and Katsuya. The fun thing about these peppers is that they’re a mild, sweet pepper, yet about one in every ten is spicy!  Surprise!

I call them the “Russian roulette” of peppers because you never know when you’re going to get a spicy one!

Up until a couple of years ago, I was only able to find fresh shishitos at the Asian markets around San Diego. Now I see them at most major grocery stores, including Sprouts and Trader Joe’s.

These blueberry cream cheese muffins are so decadent, they could easily be mistaken for dessert (or if you are me, 3 nights last week, they actually were dessert!)  Yeah, I just admitted that 😉

When I took these muffins out of the oven, the blueberry was bubbling out of the chocolate crumble topping and my mouth immediately began to water!

While I will always love my Bacon Maple Brown Sugar Muffins, they are now tied for first place with these delicious little treats!

I seriously can’t get enough of these seriously topped salads, like this Spinach Kale Salad topped with dates, quinoa, pistachios and roasted butternut squash, this Spinach Arugula Salad topped with strawberries, crispy goat cheese, avocados and almonds,  this Cobb Salad topped with Cajun Turkey, tomatoes, pepper jack cheese, onions and avocado, or this Israeli Couscous Salad topped with avocado, cilantro, pomegranate seeds and goat cheese.

See, I was totally serious about all of the things on top of my salads! And this Grilled Romaine Salad is no exception to the rule, it’s actually the most topped salad of them all, piled high with juicy tomatoes, grilled corn, crispy tortilla strips, creamy goat cheese, fresh avocado, protein rich black beans and roasted bell peppers and jalapenos.

While I’ve served this salad as a side dish with Beef Barbacoa Tacos, Chipotle Lime Chicken Fajita Skewers and Cheesy Avocado and Corn Enchiladas, this salad can definitely be a meal on it’s own!

A couple of weeks ago our awesome neighbors invited us over for the first neighborhood BBQ of spring and made these delicious grilled stuffed peppers with a Jalapeno Artichoke Dip from Costco.

I was inspired and came home to make my own Jalapeno Artichoke Dip Stuffed Peppers with an easy, homemade dip recipe! I then proceeded to make these peppers three different times in two weeks, in Oklahoma, on Cinco De Mayo and to make and share on the blog.

Over the years I’ve tried many veggie burgers, from homemade, to restaurants, to pre-packaged at the grocery store, you always get one of two things, a burger filled with veggies or a vegetarian burger that’s masquerading as a meat burger, which tastes more like meat than veggies.

While I’ve had great versions of both, I tend to prefer the veggie-filled burgers. Since I’m not a vegetarian, when I eat veggie burgers I’m not trying to replace a beef or turkey burger, I’m simply looking for a super flavorful and unique way to go meatless and add more veggies to my diet!

It’s the week of Thanksgiving and I have so much to be thankful for! I’m building my dream home with the most wonderful man in the world (I might be slightly biased ;-)), I have an amazing family, the best friends a girl could ask for and my job is sharing delicious recipes with the world, which in my opinion, is the best job in the world!

In fact, as of today, this easy stuffing biscuit recipe is my 1,000 post!!

That’s 1,000 times I’ve sat down with my laptop and shared my words, pictures, recipes and inspiration on this blog.

It’s crazy that what started with this 3 sentence first post, and this first recipe post for Creamy Orzo with Roasted Vegetables, has turned into a full time career, writing for the Today Show, appearances on TV stations across the country, a cookbook deal and so much more!

I decided to stop by a couple of weeks ago before heading over to the new house for a meeting with our contractor and pick up some red and green curry paste.

I used the red curry paste in this recipe for Slow Cooker Thai Peanut Chicken Noodles (seriously, so good!) and the green curry paste in this recipe for Avocado Curry!

When I lived downtown San Diego, I used to frequent a little pizza shop that sold garlic knots in a bag by the half dozen. My friends would order pizza slices, I would order a dozen garlic knots and literally just eat them out of the bag, like the civilized food blogger I am! 😉
