Soy Chorizo Quesadilla

Soy chorizo, Mexican shredded cheeses & spices are combined in this easy vegetarian quesadilla recipe, made in just 15 minutes! When corn tortillas are used, this recipe is also gluten free.

I love to use Trader Joe’s Soy Chorizo in this recipe, but other brands of soyrizo will also work just fine. This Soy Chorizo Quesadilla pairs perfectly with a side of Restaurant Style Mexican Rice and Homemade Pico De Gallo!

Calling all my fellow soyrizo fans out there! This soy chorizo recipe will be your new go-to favorite for crazy busy weeknights! I love this recipe because it only takes 15 minutes to make a delicious, vegetarian dinner.

You can even whip up a side of guac to go with it while the quesadillas are cooking! I love to dip it in guac or drizzle it with a little hot sauce. Kurt is all about dipping it in sour cream. Salsa is also a great option, a little green tomatillo salsa goes so well with this quesadilla!

If you’re already at Trader Joe’s picking up the soy chorizo, I highly recommend grabbing a jar of their Hatch Valley Salsa. Dipping this quesadilla into that salsa is like a fiesta of flavors in your mouth!

Buffalo Queso Dip

Easy homemade queso dip is made on the stovetop or in a crockpot with real cheddar & cream cheese, no Velvetta! Buffalo sauce is added for a kick of flavor & spice!

Growing up in Oklahoma, queso dip was our jam! It was always served with Tex Mex, at parties and found at every Mexican restaurant in the state. Needless to same, Oklahomans love queso dip!

I’ve put my own spin on queso a couple of times. This recipe for Green Chili White Queso Dip is always a hit. Now I’ve added my favorite sauce to my favorite cheesy dip.

I am a huge fan of avocados. I’m a millennial that lives in California, of course I am! Haha! No matter your age or where you live, if you love this creamy green fruit as much as I do, allow me to give you a virtual high five!

Avocado is the base for my favorite smoothie recipe, the Lean Green Superfood Smoothie. It’s also the main ingredient in THE BEST Vegetarian Enchiladas with Creamy Avocado Sauce.

And finally, it is the reason my favorite green dip exists. Without avocados, there would be no guacamole! And a world without guacamole would be tragic!

Guacamole is delicious as a dip, a topper of tacos and a must-have addition to burritos. Yes, I know, guac is extra! ūüôā But not if you make your own at home!

While I love a traditional, no frills guacamole, I also love to put fun twists on the dip. Chipotle Bacon Guacamole is perfect for the bacon enthusiast. Peach Strawberry Guacamole is a fun, sweet, summery twist on the dip. But my all-time favorite guacamole recipe has to be this Grilled Pineapple Tomatillo Guacamole.

I’ve been making this recipe since 2012 and I have to say, it’s always a hit at parties! The sweet and smokey grilled pineapple, tomatillos and jalape√Īos add so much flavor to this delicious guacamole recipe.

It’s great with chips for dipping, or for a healthy option, serve it with mini peppers or sliced bell peppers!

Kimchi Fried Rice

Kimchi Fried Rice is a delicious Korean dish, that’s easy to make in just 15 minutes. This ¬†recipe is vegan, gluten free & can be served as a side dish or entree!

I love this kimchi bokkeumbap recipe on its own as a meal for lunch. I also love serving it topped with melt-in-your-mouth Korean BBQ Short Ribs for dinner!

Can we talk about how awesome fried rice is? Leftover rice is transformed into a seriously flavorful dish in less than 20 minutes. Sign me up for that every week!

Sweet and Sour Chicken Fried Rice is a fun combination of Chinese restaurant favorites. Sriracha Steak Fried Rice is meaty, spicy and so delicious! And Kimchi Fried Rice is an easy vegan dish infused with tons of flavor!

Kimchi is seasoned, fermented cabbage, commonly served at Korean restaurants and found in Asian grocery stores. We love kimchi around our house! We eat it as a snack straight out of the fridge and love adding it to recipes.

A lot of kimchi contains anchovy paste or fish sauce, making it not suitable for a vegetarian or vegan diet. To make Vegan Kimchi Fried Rice, I started searching for Vegan Kimchi. Luckily, I didn’t have to look far!

All of the grocery stores I regularly shop at carry at least one brand of Vegan Kimchi. It’s typically found in the refrigerated vegan section of the grocery store, near the tofu and soy chorizo.

If you’re not vegan or vegetarian, any kimchi will work in this recipe. For the meat-lovers out there, this Kimchi Fried Rice is perfect paired with Korean BBQ Meatballs or Korean BBQ Grilled Salmon.

Crispy Baked Vegan Avocado Tacos

Crispy baked avocados, black beans & fresh corn salsa are combined in this scrumptious recipe for gluten free, vegan Avocado Tacos!

My love of tacos runs deep y’all! I’ve created many taco recipes over the years, including lots of meatless options for my vegan friends!

When it comes to tacos, meatless or not, you always need a great topping to finish them off. For these Avocado Tacos, I added Roasted Poblano Corn Salsa. This salsa is light, fresh and flavorful. A little drizzle of lime juice right on top and you’re good to go!

If you like your tacos on the spicier side, feel free to drizzle a little hot sauce right on top. We’re raving fans of Pico Pica in our house, so we drizzled¬† it right on top and used it to batter the avocado.

The crispy baked avocado is so easy to make. Simply dip avocado slices in your favorite hot sauce, then in a taco seasoned cereal coating. I’ve used both Rice Chex cereal and Corn Flakes to crust the avocado and both work great!

I toss the cereal right in my NutriBullet (any blender or food processor will work!) with Homemade Taco Seasoning and blend it into a fine crumb mixture. The combination of hot sauce and taco seasoned cereal crumbs gives these baked avocado strips so much flavor!

Vegetarian Couscous with Roasted Tomatillos & Corn

Roasted tomatillos, grilled corn & jalapenos are combined in this easy Vegetarian Couscous recipe! It’s the perfect vegan side dish to pair with Vegan Grilled Veggie Tacos or this delicious Vegan Burrito Bowl! And best of all, it’s made in just 15 minutes!

I love cooking with couscous, it’s versatile and easy to prepare! So what is couscous?

Couscous is a pasta made of tiny steamed balls of semolina wheat flour. The couscous found in supermarkets today is pre-steamed and dried. This makes it quick and easy to cook at home.

Because of the quick cook time, it’s great for making easy side dishes or adding to main dishes. It’s mild in flavor and will take on whatever spices or ingredients you add to it.

Couscous, as seen in this recipe, is North African and different from Israeli Couscous, also known as pearl couscous. They are both made from wheat, yet Israeli couscous is much larger in size and therefore takes longer to cook. It’s great in salads, like this delicious Israeli Couscous Avocado Salad.

The couscous used in this recipe is from Africa, but today I’m putting a Mexican spin on it! Roasted tomatillos and grilled corn add a smokey flavor to the dish, while jalapenos add a little spice! If you’re not vegan, feel free to also crumble a little queso fresco on top!

Classic Panzanella Salad with Basil & Artichokes

When it comes to salads, I know that most people immediately think a base of greens with various toppings. Well, the panzanella salad says forget the greens, we’re going straight for the bread and tomatoes!

This classic Tuscan bread salad is popular in the summer when tomatoes are at their peak. A traditional panzanella salad is composed of stale Italian bread and ripe tomatoes. It’s tossed in a dressing of olive oil and vinegar. The juice from the tomatoes, combined with the dressing, softens the stale bread and creates a deliciously fun salad!

I don’t know about you, but I’m always down to add a little crispy deliciousness to my salads! This Crispy Eggplant Caprese Salad gets regular requests from friends when I host dinner parties. And this Crispy Goat Cheese Salad is always in the rotation at our house!

The best part about a panzanella salad is that it’s so easy to make! If you don’t already have stale or toasted bread, toast that up first, then simply toss everything together in a bowl.

I introduced this Quinoa Caprese Salad on the blog a few years ago to rave reviews. Since then I’ve shared recipes for Mexican Quinoa Salad, Quinoa Corn Salad and now this Greek Quinoa Salad!

I love incorporating the flavors of the Mediterranean into my recipes. Sun dried tomatoes, olive oil, garlic and fresh herbs all add a ton of flavor to this Mediterranean style quinoa salad.

Chickpeas and quinoa are both wonderful sources of plant based protein. This is a great recipe for vegetarians or vegans looking to add more protein to their diet. It’s easy to make this quinoa salad vegan by simply omitting the crumbled feta cheese on top.

I’m always down to make healthier versions of my favorite foods, as long as they’re still delicious and maintain resemblance of the original dish. Cheesy Basil Pesto Pasta

Deliciously flavorful basil pesto, ricotta cheese & cream cheese are combined to make a creamy, cheesy sauce. The sauce is tossed with pasta shells in this easy 20 minute pesto pasta recipe!

To say that I’m a big fan of pesto would be the understatement of the century!

I make half a dozen different types of homemade pesto and use them in tons of different recipes! Basil Pesto is delicious on Baked Salmon. And Sun Dried Tomato Pesto is perfect in this One Pot Vegetarian Tortellini dish!

Pesto can be used on everything from sandwiches to pizza to grilled chicken. But its most popular use is tossed with pasta!

Instead of simply tossing pasta with pesto, in this recipe I made a creamy, cheesy pesto sauce. It’s rich, creamy and decadent! It can be served as a side dish with an entree like Italian Meatloaf or Bruschetta Chicken Parmesan.

It can also be served as a main dish. If you want a more complete meal, add a protein like grilled chicken or steak to this delicious Pesto Pasta!

Basil Pesto

Homemade basil pesto is an easy recipe to make with walnuts, fresh basil, garlic, olive oil & parmesan cheese. It’s perfect for adding to pizza, pasta or grilled chicken dishes!

Basil pesto is so easy to make and one of my favorite homemade sauces. When you make it at home, it has such a fresh flavor, as opposed to what you can buy in a jar at the grocery store.

My first time making pesto was in a home economics class in high school. Did I just totally date myself because home ec is no longer a thing? No surprise here, but home ec was my favorite class.

I learned how to sew, not well, but I tried! And I learned how to cook new things, at a much higher success rate than my sewing!

When pesto was introduced to me in home ec, I’d never eaten pesto before, but I quickly fell in love! Now I make many different versions of pesto.

The fun thing about pesto is that you can easily make it your own based on what greens you have in your fridge or what dish you want to pair it with.

You can also mix up what kind of nuts you use! While pine nuts are the traditional nut used in basil pesto, I used walnuts instead. They’re much less expensive and still work wonderfully in this pesto recipe!

I originally shared this recipe 5 years ago and these delicious bars have been a hit ever since!

My brother was diagnosed with celiac disease in 2011. At that time he asked me to transform some of his favorite foods into gluten-free recipes.

Over the years, I’ve made him Gluten Free Orange Chicken and Gluten Free General Tso’s Chicken. These were a couple of his Chinese food favorites that he couldn’t eat anymore after going gluten free.

I’ve also made him Gluten Free Nutella Brookies and Gluten Free Peanut Butter Chocolate Cupcakes. These sweet treats are perfect for birthdays, holidays and fulfilling any chocolate cravings!

Back in college, he used to work at Starbucks and loved their Blueberry Oat Bars. So of course I created a gluten free version for him! I served these oatmeal bars at his baby shower and always make them when he’s visiting me in San Diego.

They’re sweet enough to be a dessert and really delicious when topped with a scoop of vanilla ice cream! They’re also filled with so many vitamin-packed blueberries, you could totally get away with eating them for breakfast!

One cup of kale contains 36 calories, 5 grams of fiber and 15% of the daily requirement of calcium. It also contains 15% vitamin B6, 40% magnesium, 180% vitamin A, 200% vitamin C and 1,020% vitamin K.

It is also a good source of five minerals, copper, potassium, iron, manganese, and phosphorus.

I’ve used this cheese tortellini over the years to make Buffalo Chicken Cheesy Tortellini. I’ve also used it to make One Pot Vegetarian Pesto Tortellini. Both are easy meals made in 29 minutes or less!

Today I’m incorporating the delicious tortellini into a new scrumptious soup recipe that’s made in just 15 minutes! That’s right creamy, cheesy tomato basil tortellini soup is made from start to finish in under 30 minutes.

That’s less time than watching an episode of Friends on Netflix! And it’s so easy, you can totally catch up with Ross, Rachel and the whole gang while preparing this soup!

I love making my own seasonings at home! It has so many benefits vs. buying store bought pre-made seasonings.

  1. It’s cheaper! Check out the bulk spice section at your local grocery store for spices at a fraction of the cost. The commercial size spices at Costco, Smart and Final or on Amazon are also great for making your own seasoning blends. You can then make spice blends for an entire year at a fraction of the cost!
  2. You know exactly what’s in it. No hidden ingredients. No secret products that I can’t pronounce containing gluten or sugar!
  3. Making a big batch of your own seasoning blends at home means you always have them on hand.

You’ll always find¬†Italian Seasoning, Taco Seasoning and French Onion Dip Mix stocked in my pantry.

When I met Kurt, he lived on a cereal and fajitas diet most of the time. Needless to say, his diet has gotten quite the upgrade over the last 4 years! Even though I’ve incorporated a lot of new recipes into his weekly diet, he still loves his fajitas.

We make chicken fajitas, steak fajitas and veggie fajitas regularly for dinner. With this homemade Fajita seasoning, it’s easy to make any night fajita night!

I love potatoes, Blue Cheese Mashed Potatoes, Chipotle Chili Stuffed Sweet Potatoes, Crispy Cast Iron Potatoes. No matter how you serve them, potatoes are one of my favorite veggies!

While making a Mexican Meatloaf to celebrate my Dad’s birthday in 2012, I decided that I needed the perfect potato recipe to accompany the meatloaf.

I was inspired by one of my favorite Oklahoma Mexican food restaurants, Ted’s Escondido, to make these Mexican Potatoes. On their menu, they’re called “Pappas Mexicanos” and they’re described as a delicious combination of¬†potatoes, cream, onions and spices.

I knew that they would be the perfect side dish for the Mexican Meatloaf. So I created my own version at home!

These Mexican Potatoes have been a staple at my house ever since! I still love serving them with the meatloaf, but they’re also the perfect side dish for a number of Mexican recipes.

Serve Slow Cooked Beef Barbacoa over these mashed potatoes for a seriously scrumptious meal! Or serve them as a side on Taco Tuesday. They’re great with¬†Chipotle Honey Pulled Pork Tacos¬†or¬†Vegan Grilled Veggie Tacos!

I love brunch! So much so that I have a group of friends nicknamed the “SBC: Sunday Brunch Crew”. I love making brunch and going out to brunch. In my world, if the question is brunch, the answer is always yes!

I’ve made so many brunch recipes over the years that it’s impossible to pick a favorite. This Meatloaf Hash definitely ranks up there though!

When it comes to sweet brunch dishes, I can never get enough Strawberry Pancakes with Cream Cheese Syrup or Salted Caramel Cinnamon Rolls.

When hosting a brunch at my house, I always like to serve at least one egg dish, a potato dish and something sweet.

I first made this Crockpot Breakfast Casserole recipe for Father’s Day 2014. I was hosting a brunch for friends and family and wanted to make recipes that could easily feed a crowd!

Since that brunch, I’ve made this breakfast casserole dozens of times. It’s not only great for a crowd at brunch, this easy breakfast casserole is perfect for meal prepping throughout the week.

Toss this casserole in the crockpot on Sunday, then reheat it for breakfast throughout the week. It’s great on it’s own or rolled up in a tortilla for a breakfast burrito.

You can also eat it as breakfast for dinner. No matter the time of day, I’m always down for breakfast foods!

Instant Pot Mushroom Risotto

The BEST Instant Pot Risotto recipe is so easy to make! Mushrooms, garlic, French onion dip mix & parmesan cheese add a ton of flavor to this tasty dish!

Risotto is one of my favorite Italian dishes. It’s rich, creamy and so delicious!

I can’t wait to make this Butternut Squash Risotto every fall! And I love serving this¬†Cilantro Lime Pesto Risotto with Mexican food.

The one thing about risotto that I don’t like is the hands-on time it takes to make risotto. It’s not hard to make. You just have to hang out by the stove for 30-45 minutes ladling broth into the risotto. That’s what makes risotto so creamy!

I thought there was no way that Instant Pot Risotto was going to create the same creamy texture as traditional risotto. But it does!

I took me a few attempts to get the perfect rice to broth ratio down. But in the end, I created the most creamy, dreamy Instant Pot Risotto!

No more standing around the stove to get the perfect creamy risotto. Just spend 10 minutes sautéing ingredients in the Instant Pot, then pop the lid on. Pour yourself a glass of wine and relax while the Instant Pot does the work for you!

I’ve been making these homemade pancakes for years and I guarantee they’ll be the best, most fluffy pancakes you’ve ever had. You can even substitute other ingredients for the strawberries, such as blueberries, chocolate chips or sliced bananas.

Adding the cream cheese syrup is totally optionally. But I would be doing you a disservice if I didn’t highly encourage you to make the cream cheese syrup!

I’ve been making my own Taco Seasoning for years, but lately I’ve started filling my pantry with all of my favorite seasoning blends.

From French Onion Dip Mix and Pumpkin Pie Spice to Fajita Seasoning and Italian Seasoning, I keep all of these seasoning mixes on hand to easily add to recipes.

Italian 5 Layer Dip

Buffalo Cauliflower Tacos

When it comes to making vegan tacos, I love Butternut Squash Tacos in the fall, Grilled Veggie Chimichurri Tacos in the summer and these Buffalo Cauliflower Tacos year-round!

Toss some cauliflower with buffalo sauce and roast in the oven. While the cauliflower is roasting, mix up a little jalapeno carrot slaw and blend together the avocado sauce. I always make a big batch to keep on hand, along with my homemade Italian Seasoning, French Onion Dip Mix and Fajita Seasoning.

The seasoning mixes are stored in¬†half pint mason jars in the pantry, so they’re always ready to use when I need them for a recipe.

Over the years I’ve turned hundreds of friends and family members on to the deliciousness that is a Shishito Pepper! Ok, maybe that’s a slight exaggeration, but lets just say I’ve introduced a lot of people to these amazing little peppers and everyone has loved them!

What are shishito peppers?

Shishito peppers are a sweet pepper from East Asia, often served as a starter at popular sushi restaurants such as Nobu, Ra and Katsuya. The fun thing about these peppers is that they’re a mild, sweet pepper, yet about one in every ten is spicy! ¬†Surprise!

I call them the “Russian roulette” of peppers because you never know when you’re going to get a spicy one!

Up until a couple of years ago, I was only able to find fresh shishitos at the Asian markets around San Diego. Now I see them at most major grocery stores, including Sprouts and Trader Joe’s.

See, I was totally serious about¬†all of the things on top of my salads! And this Grilled Romaine Salad is no exception to the rule, it’s actually the most topped salad of them all, piled high with juicy tomatoes, grilled corn, crispy tortilla strips, creamy goat cheese, fresh avocado, protein rich black beans and roasted bell peppers and jalapenos.

While I’ve served this salad as a side dish with Beef Barbacoa Tacos, Chipotle Lime Chicken Fajita Skewers and Cheesy Avocado and Corn Enchiladas, this salad can definitely be a meal on it’s own!

It’s the week of Thanksgiving and I have so much to be thankful for! I’m building my dream home with the most wonderful man in the world (I might be slightly biased¬†;-)), I have an amazing family, the best friends a girl could ask for and my job is sharing delicious recipes with the world, which in my opinion, is the best job in the world!

I decided to stop by a couple of weeks ago before heading over to the new house for a meeting with our contractor and pick up some red and green curry paste.

I used the red curry paste in this recipe for Slow Cooker Thai Peanut Chicken Noodles (seriously, so good!) and the green curry paste in this recipe for Avocado Curry!

I was originally inspired to create this delicious breakfast treat when my bestie Amy Black said “You have to try the pumpkin filled croissants at Starbucks!” I was immediately on board with this, but when I arrived at my beloved Starbucks, there were no pumpkin filled croissants, only pumpkin muffins, scones and bread.
