Apple Strudel with Brie

Warm caramelized apples and creamy brie cheese are wrapped up in a puff pastry for an easy and delicious apple strudel recipe. It’s great for breakfast, an appetizer or dessert!
While last week was the official “Thanksgiving Week” on the blog, I just had too many delicious ideas this year to fit them all into one week!
This week I will continue the Thanksgiving party with recipes for Sous Vide Turkey Breast, Everything Bagel Stuffing, Cranberry Pomegranate Waffles and this Apple Strudel with Brie!
While this apple strudel was made with the holidays in mind, it’s a seriously delicious and easy recipe to make year-round. Perfect for a weekend brunch, a party appetizer or served as a dessert.
The creamy melted brie, pairs perfectly with the sweet and buttery caramelized apples and the warm, flakey puff pastry crust!
I braided the puff pastry on top to create a beautiful presentation, but I promise, it’s super simple to do and I’ll show you how right below!

Ingredients
- Unsalted butter
- Apples – I recommend honey crisp or pink lady apples for this recipe.
- Brown sugar
- Brie cheese
- Puff pastry dough – you’ll find a box of this dough in the freezer section at the grocery store. Make sure to purchase a package that contains 2 sheets of puff pastry dough. Since the dough is frozen, you’ll want to remove it from the freezer before starting the recipe to let it thaw at room temperature for at least 30 minutes.
- Egg
Step by step instructions
Preheat the oven to 425°F.
Place the butter in a large skillet over medium high heat. Once the butter has melted, add the apples and brown sugar. Stir to combine. Cook for 10-12 minutes, or until the apples are caramelized.
Roll the puff pastry sheet out onto a large piece of parchment paper.
To make the braided top, slice a triangle from the bottom of each side of the dough, then slice ½ inch diagonal lines up each side of the pastry.
Place the brie cheese in the middle of the puff pastry, top with the caramelized apples.
Fold the rectangle end of the puff pastry over the filling, then begin on one side, and lay one strip of dough over the filling, then alternate laying a strip of dough from the other side, then alternate back and forth, back and forth, over the filling.
Once the entire puff pastry is wrapped up, transfer it on the parchment paper to a baking sheet. Brush the egg wash over the puff pastry.
Place into the oven to bake for 25-30 minutes, or until golden brown.
Tips and tricks
- For a little extra fall flavor, sprinkle 1 teaspoon ground cinnamon or pumpkin pie spice over the apples with the brown sugar.
- For an added crunch inside the strudel, add 1/4 chopped pecans on top of the caramelized apples. And for a little extra sweetness, make them candied pecans!
- A traditional German apple strudel, known as an apfelstrudel, is made with golden raisins. Feel free to mix 2 tablespoons of raisins in with the apples, after you’ve removed them from the heat.
- If serving the strudel as dessert, heat up a slice in the microwave for 30 seconds, then top with a scoop of vanilla ice cream. And maybe add a drizzle of caramel sauce for the ultimate fall dessert!
- Store any extra strudel in an airtight container in the refrigerator for up to 5 days. Reheat in the microwave, or a toaster oven, if you have on available, for a crispier texture.

Apple Strudel with Brie
Ingredients
- 4 tbsp butter

- 2 tbsp brown sugar
- 4 oz brie cheese
- 1 puff pastry sheet, thawed
- 1 egg + 1 tsp water, whisked together to make an egg wash
