Classic Panzanella Salad with Basil & Artichokes

When it comes to salads, I know that most people immediately think a base of greens with various toppings. Well, the panzanella salad says forget the greens, we’re going straight for the bread and tomatoes!

This classic Tuscan bread salad is popular in the summer when tomatoes are at their peak. A traditional panzanella salad is composed of stale Italian bread and ripe tomatoes. It’s tossed in a dressing of olive oil and vinegar. The juice from the tomatoes, combined with the dressing, softens the stale bread and creates a deliciously fun salad!

I don’t know about you, but I’m always down to add a little crispy deliciousness to my salads! This Crispy Eggplant Caprese Salad gets regular requests from friends when I host dinner parties. And this Crispy Goat Cheese Salad is always in the rotation at our house!

The best part about a panzanella salad is that it’s so easy to make! If you don’t already have stale or toasted bread, toast that up first, then simply toss everything together in a bowl.

I added fresh basil, sliced red onion and artichoke hearts to my version of the panzanella salad. All of these fresh ingredients combined with crunchy pieces of bread creates one seriously delicious salad!

Bacon Tomato Avocado Pasta Salad

I was never a big fan of potato or pasta salads growing up. Blasphemy, I know! I’m not a big fan of mayonnaise, which is the base for a lot of potato and pasta salad dressings.

I also found a lot of pasta salads to be boring. They were lacking in that delicious kick of flavor I was looking for!

But today, I’m here to introduce you to THE SECRET ingredient for making a creamy, flavorful pasta salad dressing without mayonnaise. Avocado! That’s right, the creamy avocado dressing in this salad packs a serious punch of flavor and the texture is deliciously creamy.

Bonus, it’s so much healthier than a mayonnaise based dressing! And you only 6 ingredients to make it, two of which are salt and pepper! Simply add all of the ingredients to a blender and boom, you’ve got one tasty pasta salad dressing!

I love replacing mayonnaise with avocado on a BLT sandwich. So I decided to make a BLT Pasta Salad with my homemade avocado dressing. Who can deny the combination of crispy bacon, creamy avocado and juicy tomatoes?! I know I sure can’t!

I’ve been on a serious Mexican low carb kick lately, turning all of my favorite Mexican foods into low carb recipes. It all started with The Ultimate Low Carb Nachos, then Cheesy Taco Meatballs and Cauliflower Nachos. Now I’m adding enchiladas to my low carb Mexican menu!

Strawberry Bruschetta

Strawberry Bruschetta is made with fresh basil, strawberries, balsamic vinegar & goat cheese. It’s an easy recipe, made in just 10 minutes, perfect for brunch, appetizers or dessert! It’s wonderful as a Summer snack or the start to a Valentine’s Day meal!

To say I’m a huge fan of bruschetta would be a total understatement. Traditional bruschetta is an Italian appetizer that consists of grilled bread, rubbed with garlic and topped with olive oil and salt. Most commonly in America, it’s also topped with diced tomatoes.

This fresh Tomato Basil Bruschetta recipe has been a hit on the blog for years. It’s been so popular, that I’ve taken the topping and served it over chicken in these Bruschetta Chicken Zoodle Bowls. I’ve also added it to Baked Brie, Salmon and Chicken Parmesan.

I’m always down to make healthier versions of my favorite foods, as long as they’re still delicious and maintain resemblance of the original dish. For example, I’m down to use cauliflower or mini peppers instead of tortilla chips as the base of nachos, but they still have to be seriously cheesy, or it’s just not a nacho!

Cherry Tarragon Chicken Salad Sandwich

Fresh cherries & tarragon add delicious flavor to this easy Chicken Salad Sandwich recipe! It’s made with greek yogurt instead of mayonnaise for a healthy spin on a classic!

Chicken salad is one of of the easiest things to meal prep and eat throughout the week. It’s a great way to use up leftover rotisserie chicken and this version is both healthy and delicious!

Fresh sweet cherries are available from June through August, but frozen cherries can be found year-round. If fresh cherries can’t be found, simply thaw frozen cherries under cold running water and add them to the salad.

I like to serve my chicken salad sandwich open-faced on sourdough bread. I’ve also used multigrain gluten free bread to make this sandwich gluten fee. And I’ve tried the sandwich on butter croissants, which is Kurt’s favorite way to eat the sandwich!

No matter which way you serve it, the combination of sweet cherries, tart greek yogurt dressing and fresh tarragon, will make this the best chicken salad sandwich you’ve ever had!

For a few years now, I’ve been working on perfecting my favorite Thai recipes at home. I successfully created amazing versions of my favorite noodle dishes, Spicy Vegetable Pad Thai and Drunken Noodles. Now it was time to recreate my favorite curry dish!

Yellow Thai Curry is slightly sweet and mild in flavor, but can be kicked up to your desired spice level with the addition of Thai chilies. I use Mae Mae Ploy Yellow Curry Paste, which can be found at some grocery stores, Asian markets or online. I purchase a large container of it, as it will keep in the fridge sealed and covered for up to 2 years.

Out of all the pre-made curry pastes I’ve tried, this one definitely has the best flavor and the most similar taste to what you’d get at a Thai restaurant. It’s also vegan and gluten free, so it’s great for making vegan and vegetarian curries! Using a pre-made curry paste makes this recipe so simple and easy to toss together any night of the week!

Cheesy Basil Pesto Pasta

Deliciously flavorful basil pesto, ricotta cheese & cream cheese are combined to make a creamy, cheesy sauce. The sauce is tossed with pasta shells in this easy 20 minute pesto pasta recipe!

To say that I’m a big fan of pesto would be the understatement of the century!

I make half a dozen different types of homemade pesto and use them in tons of different recipes! Basil Pesto is delicious on Baked Salmon. And Sun Dried Tomato Pesto is perfect in this One Pot Vegetarian Tortellini dish!

Pesto can be used on everything from sandwiches to pizza to grilled chicken. But its most popular use is tossed with pasta!

Instead of simply tossing pasta with pesto, in this recipe I made a creamy, cheesy pesto sauce. It’s rich, creamy and decadent! It can be served as a side dish with an entree like Italian Meatloaf or Bruschetta Chicken Parmesan.

Gluten Free Kung Pao Beef and Noodle Bowl

Learn how to make the most tender beef, just like Chinese restaurants, in this easy recipe for gluten free Kung Pao Beef. The beef is cooked on the stove, stir fry style, then tossed with rice noodles for a delicious meal!

Have you ever wondered how your favorite Chinese restaurant gets an inexpensive cut of meat to taste so dang tender? The technique is called velveting and it’s actually SO EASY!

Simply marinate strips of meat in a combination of cornstarch, baking soda, soy sauce and mirin for 30 minutes. I used a flank steak to make this Kung Pao Beef, but this technique can also be used on other proteins.

It’s seriously a GAME CHANGER! Kurt immediately said this was the best Asian dish I’ve ever made! And with over 100 Asian recipes on the blog, that’s saying a lot!

Instead of serving the beef over rice, I tossed it with rice noodles. There’s just something about sitting on the couch with a pair of chopsticks and a big bowl of noodles. It’s Chinese comfort food and I can’t get enough of it!

I have a whole menu of go-to noodle dishes that I rotate through each week. Spicy Vegetable Pad Thai, Drunken Noodles and this Kung Pao Beef Noodle Bowl are regular players on the weekly menu!

After making these recipes, you’ll quickly realize how easy it is to make delicious Chinese food at home! Then you’ll be ditching the take out menus for good!

Making your own Chinese recipes is also the best way to eat gluten free Chinese food. My gluten free Chinese recipes are some of the most popular on the blog! Gluten Free Chinese Honey Chicken and Gluten Free General Tso’s Chicken are definitely on the MUST-TRY list!

I made this Kung Pao Beef Noodle Bowl gluten free by using gluten free soy sauce. The remainder of the ingredients in this dish should be naturally gluten free. But always be sure to check the labels on ingredients like mirin and sweet chili sauce just to be sure! If you’re not on a gluten free diet, traditional soy sauce can be used in this recipe.

Once the beef has tenderized for 30 minutes, it only takes 15 minutes to toss this entire recipe together! Faster, easier and BETTER than take out, yes please!

Basil Pesto

Homemade basil pesto is an easy recipe to make with walnuts, fresh basil, garlic, olive oil & parmesan cheese. It’s perfect for adding to pizza, pasta or grilled chicken dishes!

Basil pesto is so easy to make and one of my favorite homemade sauces. When you make it at home, it has such a fresh flavor, as opposed to what you can buy in a jar at the grocery store.

My first time making pesto was in a home economics class in high school. Did I just totally date myself because home ec is no longer a thing? No surprise here, but home ec was my favorite class.

I learned how to sew, not well, but I tried! And I learned how to cook new things, at a much higher success rate than my sewing!

When pesto was introduced to me in home ec, I’d never eaten pesto before, but I quickly fell in love! Now I make many different versions of pesto.

The fun thing about pesto is that you can easily make it your own based on what greens you have in your fridge or what dish you want to pair it with.

You can also mix up what kind of nuts you use! While pine nuts are the traditional nut used in basil pesto, I used walnuts instead. They’re much less expensive and still work wonderfully in this pesto recipe!

Basil pesto can be added to pizza, tossed with pasta or used as a marinade for chicken or a sauce to top fish. It’s super versatile and so delicious!

Shrimp is one of my favorite proteins to make easy weeknight dinners. It cooks up so quickly. It’s easy to make a recipe in 29 minutes or less!

Buffalo Shrimp Tacos are made in just 15 minutes and a favorite on Taco Tuesday. Chimichurri Shrimp Skewers are a deliciously easy recipe to toss on the grill and only take 29 minutes to make!

One of my favorite shrimp recipes is Chili Lime Garlic Grilled Shrimp. It’s delicious served over rice or in tacos and made in just 26 minutes!

When it comes to Italian style shrimp, classic shrimp scampi is where it’s at! There really is nothing better than warm garlic butter sauce poured over succulent shrimp with a fresh zest of lemon!

Shrimp scampi is traditionally served over a plate of cooked spaghetti or bucatini pasta. (My personal favorite!) But you can also mix things up and serve it over zucchini noodles or spaghetti squash for a low carb meal.

The Best Italian Meatloaf

I used to think that meatloaf was boring, that is until I started putting my own spins on the classic dish! I mean, who can deny a Buffalo Cheesy Meatloaf? It’s meat, cheese and buffalo sauce, and it’s so delicious!

And there’s 100% chance you’ll fall in love with the Bacon Wrapped Meatloaf. It’s meat wrapped in meat, what’s not to love?

With so many delicious meatloaf recipes to choose from, it’s hard to pick a favorite. Though this Italian Meatloaf definitely ranks up at the top!

Since originally making this recipe 6 years ago, I’ve tweaked it and updated it to create THE BEST Italian Meatloaf ever. Seriously, ask my friends! I make this all the time when I want to impress my guests. As described by one friend, “It’s like the most giant, delicious meatball ever!”

The key to any great recipe for meatloaf or meatballs is a combination of meats. In this recipe I used Italian pork sausage and ground beef. The Italian sausage can be mild or spicy, your choice!

I then add ricotta cheese to the meatloaf to give it an extra creamy texture. I guarantee, this will be the best meatloaf you ever eat and you’ll want to make it again and again!

Buffalo Chicken Wrap

In just 5 minutes, toss together this easy buffalo chicken wrap recipe, filled with shredded chicken, buffalo sauce, veggies & cheese! These wraps can be served cold or gilled & served warm!

My love of buffalo chicken runs deep! So deep that I devote part of each Sunday evening to making a big batch of Instant Pot Buffalo Chicken. I use this chicken in recipes throughout the week.

To make shredded buffalo chicken, simply add chicken breasts and buffalo wing sauce to an Instant Pot or slow cooker. Let the device do the work for you! After the chicken is cooked through, shred it apart and use it in a variety of recipes throughout the week. It’s seriously that easy!

Picked up a rotisserie chicken at the grocery store over the weekend? You can also shred up the leftovers and use it in this recipe.

If you’ve ever thought, ” I really love pasta and I really love tacos. I just can’t decide which one I love more!” Well, you don’t have to choose between the two anymore!

That’s right, I took the delicious flavors of tacos and incorporated them into this pasta bake recipe. It’s not only totally scrumptious, it’s totally easy too and perfect for weeknight meals!

The Creamy Avocado Sauce makes this pasta recipe unique and adds so much flavor to the dish! I’ve been using this avocado sauce in recipes for years. It first appeared on the blog in this recipe for Mexican Stuffed Shells.

These recipes are very similar, but in this Taco Pasta recipe I decided to simplify things. Instead of stuffing the ingredients into individual pasta shells, I simply tossed all of the ingredients together.

I’ve also used this avocado sauce to make the most delicious Chicken Enchiladas and Creamy Avocado & Corn Vegetarian Enchiladas.

The combination of flavors in this Baked Taco Recipe are fantastic! From the light and creamy avocado sauce, to the taco seasoned ground beef. I could eat this dish for every meal for a week.. and I have!

When you hear the word “chili seasoning”, you probably think of a big bowl of chili. This seasoning mix does make one delicious batch of chili, but it can also be used in a variety of recipes!

I love tossing sweet potatoes in chili seasoning, then adding them to this Sweet Potato Cranberry Spinach Salad. I also love making an easy skillet turkey chili, then adding it to spaghetti squash.

When you make your own homemade spice blends, you know exactly what’s in it! Just like in these recipes for homemade taco seasoning, Italian seasoning and fajita seasoning.

This recipe combines 8 common spices that you probably already have in your spice cabinet. I like to buy the most common spices I use in the kitchen and in my seasoning mixes in bulk.

I love making my own pesto at home. From Walnut Sage to traditional Basil to Kale Pesto, I’m kind of a pesto fanatic!

Homemade pesto is so much better than store bought and it’s easy to make in just 5 minutes. It’s so incredibly flavorful, I promise after one bite you’ll be hooked on making your own pesto too!

Sun Dried Tomato Pesto has a sweeter taste than pesto made from greens. I love this recipe on a variety of dishes. Try it on a sandwich or panini! Add it to this Portobello Caprese Sandwich for a fun low carb meal.

Hawaiian Pizza with Sriracha Pizza Sauce

Delicious Hawaiian Pizza is easy to make at home! This recipe is topped with a scrumptious homemade Sriracha Pizza Sauce that will instantly become a new family favorite!

Pizza might just be the greatest food ever created. It’s carbs, sauce and cheese, plus a variety of delicious toppings all combined in one dish!

Starting a pizza recipe with a delicious dough and scrumptious sauce is the key to a great pizza. I love experimenting making different pizza sauces. The Three Cheese Jalapeno Ranch sauce that I created for this Jalapeno Sausage Pizza is an all time favorite. But this Sriracha Pizza Sauce is now tied for first!

Growing up, one of my favorite pizza restaurants in Oklahoma was Hideaway Pizza. I would always order their “Maui Magic”, a pizza topped with pineapple chunks, mandarin oranges and Canadian bacon.

This recipe is my adaptation of that delicious pizza! In this version, I added homemade Sriracha pizza sauce and swapped out the Canadian bacon for prosciutto.

The spiciness of the sriracha pizza sauce pairs perfectly with the sweetness of the pineapple and mandarin oranges. If mandarin oranges on a pizza is just too weird for you, they can always be left off. Already have ham at home? Use that in place of the prosciutto.

But for the love of Sriracha, take a little time before preparing the pizza to make this sriracha pizza sauce! The recipe makes enough for 3 pizzas. Save extra sauce in the fridge or freezer to make delicious pizzas over and over!

Gluten Free General Tso’s Chicken

Gluten Free General Tso Chicken is easy to make in only 20 minutes! This recipe is healthy & even better than Chinese takeout with the most delicious General Tso sauce!

In the blogging world, I’d say that I’m most known for my recipes with buffalo sauce. But coming in at a close second are my gluten free Chinese recipes!

Around the same time I started blogging, my brother was diagnosed with celiac disease. He asked me to recreate some of his Chinese food favorites to make them gluten free.

Being the wonderful sister that I am (haha!) I obliged and created some of his favorite recipes. This Gluten Free Orange Chicken is his all-time favorite. But these recipes for Gluten Free Honey Chicken and Gluten Free General Tso Chicken, both come in at a close second!

Typically, general tso’s consists of battered, deep fried chicken thighs, covered in hoisin sauce. I made this recipe healthy and gluten free by lightly pan frying the chicken, instead of deep frying it. I also used chicken breasts instead of chicken thighs.

Chicken breast meat is lower in calories and fat, creating a healthier dish. I switched up the general tso sauce recipe to give it a similar taste to hoisin without the gluten.

The sauce is slightly spicy and so delicious! It’s so good that I’ve also used it to make General Tso’s Vegetarian Noodle Stir Fry and General Tso’s Chicken Wings.

You can actually double, or triple, the sauce ingredients in this recipe. Keep the extra sauce on hand to make more chicken, noodle stir fry or chicken wings throughout the week. The sauce will keep in a sealed container in the refrigerator for 5-7 days.

My other favorite thing about pesto is how easy it is to make. Toss all of the ingredients in a food processor and you’ve got delicious homemade pesto in just 5 minutes!

This kale pesto is not only easy, delicious and versatile, it’s also packed with health benefits!

Kale helps with cancer prevention, lower cholesterol and lower blood pressure.

One cup of kale contains 36 calories, 5 grams of fiber and 15% of the daily requirement of calcium. It also contains 15% vitamin B6, 40% magnesium, 180% vitamin A, 200% vitamin C and 1,020% vitamin K.

It is also a good source of five minerals, copper, potassium, iron, manganese, and phosphorus.

This recipe has 4 cups of kale in it. That’s a lot of vitamins!

Gluten Free Orange Chicken

My obsession with making Chinese food favorites gluten free started with this Gluten Free General Tso’s Chicken recipe. It then continued on to Gluten Free Chinese Honey Chicken and this Gluten Free Orange Chicken.

Needless to say, if you’re gluten free, you don’t have to miss out on your favorite Chinese restaurant favorites anymore!

Instead of battering the chicken in flour, I batter it in cornstarch. And instead of deep frying the chicken, I stir fry it on the stove. I use gluten free soy sauce to make the best orange sauce ever!

Out of all the recipes I’ve ever made on the blog, this is my brothers favorite recipe! The best part is, it’s made in just 29 minutes. It’s easy enough to whip up for dinner tonight!

That’s less time than watching an episode of Friends on Netflix! And it’s so easy, you can totally catch up with Ross, Rachel and the whole gang while preparing this soup!

I love making my own seasonings at home! It has so many benefits vs. buying store bought pre-made seasonings.

  1. It’s cheaper! Check out the bulk spice section at your local grocery store for spices at a fraction of the cost. The commercial size spices at Costco, Smart and Final or on Amazon are also great for making your own seasoning blends. You can then make spice blends for an entire year at a fraction of the cost!
  2. You know exactly what’s in it. No hidden ingredients. No secret products that I can’t pronounce containing gluten or sugar!
  3. Making a big batch of your own seasoning blends at home means you always have them on hand.

You’ll always find Italian Seasoning, Taco Seasoning and French Onion Dip Mix stocked in my pantry.

When I met Kurt, he lived on a cereal and fajitas diet most of the time. Needless to say, his diet has gotten quite the upgrade over the last 4 years! Even though I’ve incorporated a lot of new recipes into his weekly diet, he still loves his fajitas.

I love potatoes, Blue Cheese Mashed Potatoes, Chipotle Chili Stuffed Sweet Potatoes, Crispy Cast Iron Potatoes. No matter how you serve them, potatoes are one of my favorite veggies!

While making a Mexican Meatloaf to celebrate my Dad’s birthday in 2012, I decided that I needed the perfect potato recipe to accompany the meatloaf.

I was inspired by one of my favorite Oklahoma Mexican food restaurants, Ted’s Escondido, to make these Mexican Potatoes. On their menu, they’re called “Pappas Mexicanos” and they’re described as a delicious combination of potatoes, cream, onions and spices.

I knew that they would be the perfect side dish for the Mexican Meatloaf. So I created my own version at home!

These Mexican Potatoes have been a staple at my house ever since! I still love serving them with the meatloaf, but they’re also the perfect side dish for a number of Mexican recipes.

Serve Slow Cooked Beef Barbacoa over these mashed potatoes for a seriously scrumptious meal! Or serve them as a side on Taco Tuesday. They’re great with Chipotle Honey Pulled Pork Tacos or Vegan Grilled Veggie Tacos!

Instant Pot Mushroom Risotto

The BEST Instant Pot Risotto recipe is so easy to make! Mushrooms, garlic, French onion dip mix & parmesan cheese add a ton of flavor to this tasty dish!

Risotto is one of my favorite Italian dishes. It’s rich, creamy and so delicious!

I can’t wait to make this Butternut Squash Risotto every fall! And I love serving this Cilantro Lime Pesto Risotto with Mexican food.

The one thing about risotto that I don’t like is the hands-on time it takes to make risotto. It’s not hard to make. You just have to hang out by the stove for 30-45 minutes ladling broth into the risotto. That’s what makes risotto so creamy!

I thought there was no way that Instant Pot Risotto was going to create the same creamy texture as traditional risotto. But it does!

I took me a few attempts to get the perfect rice to broth ratio down. But in the end, I created the most creamy, dreamy Instant Pot Risotto!

No more standing around the stove to get the perfect creamy risotto. Just spend 10 minutes sautéing ingredients in the Instant Pot, then pop the lid on. Pour yourself a glass of wine and relax while the Instant Pot does the work for you!

Italian Seasoning

Homemade Italian seasoning is an easy recipe to mix up for chicken marinades, seasoning veggies & adding to pasta sauces. It’s whole 30, vegan & gluten free!

I’ve been making my own Taco Seasoning for years, but lately I’ve started filling my pantry with all of my favorite seasoning blends.

From French Onion Dip Mix and Pumpkin Pie Spice to Fajita Seasoning and Italian Seasoning, I keep all of these seasoning mixes on hand to easily add to recipes.

The taco seasoning is perfect in this easy Crock Pot Taco Soup. The French Onion Dip Mix makes the most delicious Instant Pot French Onion Pot Roast.

One of my families favorite easy dinners growing up was BBQ baked chicken and baked potatoes. It was so easy to pour bbq sauce over chicken and toss it in the oven with a few potatoes to make a dinner for the entire family in about 5 minutes.

Thai Coconut Soup with Potstickers

I’m all about combining two things I love into one dish!

Thai peanut sauce and roasted sweet potatoes, tomato basil bruschetta and grilled chicken, and now Thai coconut soup and potstickers!

Whenever we go out for dinner, there’s an 8 out of 10 chance I’m going to try to convince Kurt to go to Koon Thai. It’s my favorite Thai restaurant and one of my overall favorite restaurants in San Diego!

They make the most delicious pan fried roti bread, curries and noodle dishes. They also make the best Tom Kha soup I’ve ever had! After our last visit, I decided it was time to try making my own Tom Kha soup at home.

What is Tom Kha Soup?

Tom Kha soup is a Thai coconut soup. It’s made with coconut milk, lemongrass, Thai chili peppers, cilantro, mushrooms, fish sauce and lime juice. While it’s typically made with chicken, you can also find versions with shrimp, pork or tofu.

What is the difference between Tom Kha and Tom Yum Soup?

Tom Yum Soup is made with a base of boiled meat, such as shrimp or pork, water and herbs. It is sour and spicy in flavor. Tom Kha Soup is made with a coconut milk base and is more sweet and spicy in flavor, than sour.

There’s no denying my love for pumpkin spice in the fall, but did you know that pumpkin spice doesn’t actually contain any real pumpkin?!

That’s right, most of your beloved pumpkin spice treats are simply flavored with pumpkin pie spice, not actual pumpkin.

French Onion Dip Tacos

Creamy French onion dip adds a delicious twist to these ground beef tacos! The entire recipe is made in just 20 minutes, for an easy dinner!

In our house, French Onion Dip and chips are always a requirement on the menu for NFL Sundays!  So like any good food blogger, I made my own French Onion Dip Mix and started making homemade dip every Sunday.

Since I now had this delicious French Onion Dip Mix sitting in the pantry, I decided to try it out on other recipes, instead of just dip!

I first tried it out on pot roast and the result was AMAZING! Seriously, French Onion Pot Roast is the best pot roast ever! It was so good, I made it both in a pressure cooker and in a slow cooker.

Next up, I made these French Onion Dip Tacos. The perfect game day food that combines easy ground beef tacos with a seriously delicious dip!

We ate them on game day in crispy shells, then I made them again for dinner during the week and served them on flour tortillas. Both totally tasty options for this seriously easy taco recipe!

Honey Bunches of Oats Chicken Strips

Honey Bunches of Oats Chicken Strips are deliciously sweet & crispy! They can be baked in the oven or fried on the stove for an easy dinner recipe!

For this recipe, I took my Dad’s Famous Captain Crunch Fried Chicken and gave it a twist by using Honey Bunches of Oats cereal instead of Captain Crunch cereal and baking the chicken instead of frying it.

Well, I actually baked half and fried half, because I like options! 😉

Our house was divided on their favorites between the fried and the baked. My Mom liked the fried better, Kurt liked the baked better and I just couldn’t chose, they’re both so good!

Baking the chicken brings out more of the Honey Bunches of Oats flavor, while frying it gives it that crunchy on the outside, juicy on the inside deliciousness that we all know and love!

Either way, you can’t go wrong!

Heck, bake half and fry half like I did and do the taste test yourself!

A few weeks ago I had a bag of diced up butternut squash in the fridge and a package of gnocchi in the pantry, I decided to experiment putting the two together in an easy sheet pan recipe for dinner.

That dinner turned out so delicious that I turned around and made it again the next day for the blog!

The crispy kale, paired with the tender gnocchi and creamy butternut squash creates the perfect trifecta of textures. And all of the fall spices really take the flavor of this recipe over the top!

After Kurt took his first bite, his response was “you could open a bakery that just sells these!” They’re seriously that good, they can stand on their own up against any other fall dessert.

They’re the perfect little snack to serve at Halloween parties or to bring to a Friendsgiving celebration. I can definitely tell you that this will not be the only time I make these pumpkin cookies this fall!

Buffalo Cauliflower Tacos

When it comes to making vegan tacos, I love Butternut Squash Tacos in the fall, Grilled Veggie Chimichurri Tacos in the summer and these Buffalo Cauliflower Tacos year-round!

These tacos seriously couldn’t be easier to make!

Toss some cauliflower with buffalo sauce and roast in the oven. While the cauliflower is roasting, mix up a little jalapeno carrot slaw and blend together the avocado sauce. Once the buffalo cauliflower comes out of the oven, toss it all on a tortilla and you have one seriously scrumptious vegan taco recipe!

Tacos! One of my favorite things to put recipe twists on! Whether it’s Taco Spaghetti, Taco Soup or Taco Dip, I love finding new & different ways to eat tacos!

The Taco Ring was introduced to me when I was 12 years old and my Mom took me to a Pampered Chef party. (And people wonder why I love cooking so much!) We made taco rings at the party and the recipe instantly became a favorite at the Bond house!

Homemade Taco Seasoning

Make your own taco seasoning at home to use on chicken or ground beef tacos, in taco soup or taco spaghetti! It’s easy to triple the recipe and store it in a mason jar in the pantry until ready to use. This recipe is mild, gluten free, preservative free and Whole 30 compliant!

I’ve been making this homemade taco seasoning for years. I use it in Taco Soup, Buffalo Taco Spaghetti, Taco Croissants, simple ground beef tacos and so many other recipes!

I always make a big batch to keep on hand, along with my homemade Italian SeasoningFrench Onion Dip Mix and Fajita Seasoning.

The seasoning mixes are stored in half pint mason jars in the pantry, so they’re always ready to use when I need them for a recipe.

One of my favorite things to do when creating new recipes is to combine two favorite dishes into one amazing new dish!

I was inspired to make this recipe after seeing something similar on a menu in Washington DC at Fat Pete’s BBQ. Their version featured jalapenos, stuffed with cream cheese, topped with a little smokie, then wrapped in bacon.

I decided to go more traditional with my pigs in a blanket and wrap the entire thing in crescent rolls, but I have no doubt that bacon would also be an amazing choice!

The real debate was what to call this little appetizer, the best idea I heard from friends was “Pigs in a Popper”, so cute and perfect for this appetizer mash-up!
