While it’s true that I have only ever worked a “9-5” corporate job for three months of my life, I did spend a lot of time in college, like 7 years. During my time in college, I spent long days on campus and got so sick of eating at the same sandwich shop every day, but bringing my lunch meant, basically the same thing, bringing a sandwich or salad, every day!

I was always on the look out for something new, delicious and nutritious that I could bring to school with me, and make in just a couple of minutes, only using a microwave.

Now, I may not be in school anymore, but there are still those days where I need a go-to 5 minute lunch option when I’m running around and too busy to cook anything, and that’s where my friends at Minute® Ready to Serve Rice and Chicken of the Sea come in!

Both Minute Ready To Serve Rice cups and Chicken of the Sea Salmon pouches are wholesome, delicious ways to spice up your lunch routine!

Over Memorial Day weekend, my boyfriend Kurt & I headed to Philadelphia for his cousins wedding. Since it was my first time in Philly, I had to check out the food scene!

Of course I tried several Philly Cheesesteaks (you can read all about that in my Food Bloggers Guide to Philadelphia!) but I also tried some local restaurants that were recommended by friends from the area.

One of these recommendations was Cuba Libre, a Cuban restaurant where we indulged in an unlimited tapas brunch!

Skin Boosting Blueberry Avocado Smoothie

When it comes to getting a little older day by day, working a little harder day by day and sleeping a little less day by day, I need a little help when it comes to keeping my skin looking young, fresh and wrinkle-free (and I’m pretty sure I’m not alone on this!)

On a recent visit to see my beautiful, talented and super sweet esthetician, Elizabeth Rabena, I asked her about things I could do to improve those annoying circles under my eyes… seriously it’s like one day I woke up and was no longer 22, how did that happen? LoL!

She recommended incorporating more turmeric in my diet to help with the dark circles.

A few of my recipes are completely unplanned and come out of sheer necessity to use up items in my refrigerator. These are sometimes my very best recipes.  This is one of those recipes.

I had a container full of cooked, shredded chicken leftover from making a Buffalo Chicken Frittata (recipe is in my cookbook!) for brunch last weekend. I knew I needed to use it up before heading out of town this weekend so I started to brainstorm.

Spiralized Jicama & Avocado Salad

Jicama Avocado Salad

When I first purchased my Spiralizer, I went to the grocery store, perusing the produce section for anything and everything I could potentially spiralizer. One of the items that I found was jicama.

Jicama, also known as a “Mexican Yam” is a vegetable traditionally from Mexico and Central America.  It’s a slightly sweet, starchy vegetable that resembles the consistency of a pear or apple.  It’s high in dietary fiber and Vitamin C making it a healthy addition to your diet!

Spinach, Goat Cheese and Bacon Frittata

A bag of spinach, a carton of eggs and a package of bacon, what to do, what to do?? It’s sounding like my Italian ancestors version of an omelet is about to happen!  Yes, if you were wondering what exactly a frittata was or what the difference between a frittata and quiche were, you are not alone!  So in the simplest terms: a quiche has a crust (usually) and more liquid than egg, where as a frittata has more egg than liquid and no crust, there it is!

So whether you just learned your fun fact of the day or not, you’re about to dive into a delicious recipe for this Italian crust-less egg dish!

Prep Time: 10 minutes
Cook Time: 10 minutes

Ingredients (serves 4)

  • 6 slices bacon
  • 8 eggs
  • 1/4 cup milk
  • 1 tsp kosher salt
  • 1 tsp pepper
  • 1 tsp olive oil
  • 1/2 onion
  • 1/2 red pepper
  • 3 cups spinach
  • 2 oz goat cheese
  • 1 avocado

Start by frying up the bacon.

Don’t mind those extra couple slices of bacon.  Those are for…. someone 😉 Fry until crispy then drain the grease, crumble and mix together with the eggs, milk, salt and pepper.

Next, heat the olive oil in a sauté pan and add the onion and red bell pepper.

Sauté for 2-3 minutes then add spinach and sauté for an additional 3 minutes.

I know that looks like a LOT of spinach, but I promise it will cook down!

See, I promised 🙂

Next, add in the egg and bacon mixture.

Let cook for 2 minutes then crumble the goat cheese on top.

These chunks of goat cheese add an amazing creamy surprise in the middle of the Frittata!  Now cook on the stove for 5 minutes, then move into the oven to finish cooking at 400° for 10 more minutes.  Remove from the oven and voila!

I sliced the Frittata into pieces, topped with avocado and served with homemade rosemary focaccia bread!

♣ Vegetarian Option: Omit the bacon.

♦ Gluten Free Option: Omit the rosemary focaccia bread.
